Rhubarb Strawberry Crunch

Reviewed: Jul. 8, 2014
I like my desserts less sweet so I used half the white sugar with the fruit. Other than some ground flax and sub 1/2c white for Brown sugar the rest was as written. I baked on the warming tray (is that what it is called?) In my bbq. I liked the filling but found the topping did not crisp up very well, was thick and too floury for my tasre, I prefer more of an oatmeal consistency. I might try again but use less flour, more oatmeal, snd less topping altogether. It did taste fine warm with ice cream just not a re-do as-is for me.

Aunt Norma's Rhubarb Muffins

Reviewed: Jun. 22, 2013
I really like this recipe. I think for the topping I had too much butter because it was a bit too liquid to sprinkle, but I eyeballed this measurement so could be me. My son insisted on sprinkles on top of some of the muffins. In order to be able to send as a school snack (nut free) I replaced the walnuts with white chocolate chips which were very good. Kids loved these. I also boiled the rhubarb and also added a handful of frozen strawberries. Thanks for the great recipe!

Creamy Lemon Pie

Reviewed: Mar. 7, 2013
This was sweet. I followed the recipe directly but added about a tsp of lemon zest. Topped with meringue, used a frozen pie. Not a dramatic dessert but tastes good. Nice and quick.

Honey-Spice Drumsticks

Reviewed: Mar. 8, 2012
This was a good weeknight dinner. I decided to bake in the oven at 350. It took roughly 45 minutes. The glaze was very watery so I put it in a saucepan and added some cornstarch (a few tsp in some water) to thicken it up. Yum! Kids liked it too. We ate it with steamed green beans, corn and a salad. This would be a great meal for a BBQ with lots of people, you could also use the glaze for wings. I omitted the pepper because I don't like it but also reduced the cumin to 1tsp. Thanks for sharing!!!

Chocolate-Oat Toffee Bars

Reviewed: Feb. 26, 2012
I made these bars with my 5 year old son and his friend for a playdate. It was a good/easy recipe to make with kids. I was underwhelmed by the crust which seemed a bit floury/crumbly/doughy or something. I made the recipe exactly as written. My preference is for a thinner crust with more topping. However the kids thought they were good and they enjoyed making them, and felt proud. It was a good recipe for learning fractions also (I put the measuring cups out and told them to find the 1cup, 1/3 cup, tablespoon measure etc). I would make this again with kids but not for a situation where I was bringing my own cookies to share with other adults.

Yogurt Chocolate Cake

Reviewed: Oct. 26, 2011
I made these and from suggestions of others, added a few tbsp of milk to the batter. I used plain greek 0% fat yoghurt. I also changed 1/2 cup of flour to 1/2 cup of cocoa powder because I was looking for a chocolate recipe - I made these into 16 cupcakes. I didn't have butter on hand which is mainly why I picked this recipe. The cupcakes only took 15 minutes to bake, and I am at altitude (Calgary AB) but they were tasty and moist. I haven't iced them yet, will be making them into some kind of halloween treat. Thanks for the recipe! Rating of 4 stars because I didn't make it as-written. The cupcakes were more dense than fluffy, which is fine with me because I want to dress them up and I don't want them to be too fragile.

Turkey and Quinoa Meatloaf

Reviewed: Oct. 14, 2011
I made this as listed except added approximately 1/3 cup chopped orange pepper. I omitted the hot sauce for little kids, perhaps this would have given the extra oomph to make this a 5 star. Texture was good, a great way to incorporate quinoa, next time I might experiment with other flavours or spices. This was a very good weeknight recipe, I would also like to try making this recipe as meatballs for pasta. Thanks for sharing!

Walnut Rice Salad

Reviewed: Aug. 27, 2011
I used an "ancient grains" rice mix with quinoa, barley etc. for this salad. I didn't have parsley though, used everything else. It was very delicious, and the dressing was light but flavourful. I didnt' use the full 1/2 cup of oil I just drizzled in what looked about right. I used fresh lemon juice which I think helped too. Thanks!!!

Grilled Peaches with Berry Sauce

Reviewed: Jul. 17, 2011
I really liked this recipe. I wanted the "grilled" look so I grilled the peaches first to make the grill lines then wrapped in foil with sugar and cinnamon and butter. The sauce was a great finishing touch, and I just added a small dollop of whipped cream to finish it off. Great summer recipe, thanks!

Thai Peanut Dip

Reviewed: Apr. 8, 2011
This was a perfect sauce for some salad rolls to encourage my kids to make their own healthy food and eat it. My 3 year old did eat some salad roll but mostly used his finger to dip and eat this sauce. I used plain yoghurt instead of the mayo, and cut the sugar to about a tbsp. I would make this again. It is runny, which was fine with me, but if you are expecting a more traditional thick dip you might want to thicken with something.

Peanut Beef Stir-Fry

Reviewed: Apr. 8, 2011
This was ok. I only had chicken broth on hand which may have made the difference, it tasted fine for a weeknight meal but there was no "wow". Thanks for the recipe, I might try it again another time, maybe with coconut milk in it for more flavour. I served with salad rolls with a peanut dipping sauce.

Whole Wheat Ginger Snaps

Reviewed: Nov. 23, 2010
I really enjoyed this cookie. I found like another reviewer a "sandy" taste when fresh from the oven but disappeared once cooled. I think this is the whole wheat flour. I have had better molasses cookies but I liked that this one was with whole wheat flour. there was something I can't quite put my finger on - they were almost too sweet, with a very strong molasses taste. Could have been the molasses I used too (dark). Overall a very good cookie, thanks!

Blueberry Apple Crisp

Reviewed: Feb. 26, 2010
I made this recipe as-is, with granny smith apples. It is more like a cobbler, true, but delicious. Everyone loved it. I found it a tad sweet but nobody else did, so I guess depends on your taste. Thanks for a great, easy dessert - I'm trying it tonight with different fruit

The Best Rolled Sugar Cookies

Reviewed: Dec. 8, 2008
I was looking for a recipe without shortening (I don't care for using that in baking). This recipe fit the bill, and I get rave reviews. The cookies do seem to spread a little bit but that does not bother me, soft edges don't take away from the look in my opinion. I decorated with royal icing.

Zucchini Yogurt Multigrain Muffins

Reviewed: Aug. 27, 2007
I really enjoy these muffins. I don't have oat flour so I have taken regular oats and put them in a food processor to grind them a bit, this seemed to work well. I found the recipe as written too sweet for my taste. Just made them today, with 3/4c of honey and 1/4 cup of white sugar, this tastes just right. Today I added about 2tbsp wheat germ. Great with raisins or walnuts (or both, probably) Thanks for the recipe.

Coconut Tofu Keema

Reviewed: Mar. 1, 2007
I used 3c of tomato sauce and 3c of diced tomatoes (with liquid removed). I found this to be very heavy on the tomato taste, I could not taste the coconut milk at all. I would not make this again, but would perhaps try using just some diced tomatoes with the liquid removed instead of all the tomato paste. I did not like the consistency, I found it too runny. I found it barely edible as is, but I did not have red pepper paste, but I can't see how that would have made a difference. I used chili powder instead. Sorry, thanks anyway.
