Fluffy Pancakes

We use this recipe often. I wish the batter were a little thinner, as I prefer more traditional 'diner style" thin pancakes, but this is a really nice recipe that we have made for guests, has great flavor and always gets compliments.

Chicken Salad Balsamic

Inspired to look for a non-mayo based chicken salad by a local restaurant who serves a version that includes currents and roasted red peppers. This is an excellent recipe that our whole family loved, and can be changed up to include other sweet/savory veggies and fruits for endless combinations.

Fresh Broccoli Salad

We made this recipe with fresh broccoli from our garden. Absolutely excellent. The fresh, tender broccoli was a big part of the reason we enjoyed this so much -- great for use with your farmer's market or CSA produce!

Toasted Pumpkin Seeds with Sugar and Spice

I, like many other reviewers, have never really liked pumpkin seeds. My first grader had some at school and wanted to make them so we tried this. I am a convert! Loved this recipe and our family ate them up quickly. There was a lot of topping, you could probably cut back on that and still get good results

Chewy Chocolate Chip Oatmeal Cookies

This is an absolutely excellent recipe. I make this with Earth Balance spread instead of butter since my daughter has a dairy allergy. I have also made them with butter and have to say that they are actually even better with the earth balance though the recipe is just fantastic as written! Highly recommended!

Swanson® Roasted Tomato and Barley Soup

My kids ate this up and loved it, but my husband I found it to be "just okay". Just not as much flavor as I would have liked. I did feel that perhaps my tomatoes didn't get roasted enough, so that probably was part of it; I followed the directions and ingredients as written aside from omitting the parsley as we do not care for it.

Nana's Barbeque Sauce

On its own this has too much of a ketchup taste to me, but when we used it on chicken and grilled it the sauce took on a nice flavor. Probably not something I would serve to a guest, but easy to make and a pretty good flavor for quick a weeknight family meal with on hand ingredients!

Almond Cupcake with Salted Caramel Buttercream Frosting

I am rating this for the cake portion only, as i chose to make a different icing for these. The almond cupcakes are truly delicious. They easily rival the almond cake from a bakery across the state from me that my mother in law gets me on my birthday each year (and I crave all year long!) Dense and moist and a perfect almond flavor that is not too overwhelming but definitely distinct.

Chocolate-Zucchini Cupcakes

We really loved this recipe. I made these for my 5 year old daughter's birthday party - the parents asked for the recipe, and the kids asked me to give their parents the recipe too! A huge hit. The only modification I made was to use 3/4c applesauce and 1/4c oil in place of the oil recommended, and omitted the nuts. I topped them with a quick homemade vanilla buttercream instead of store bought. Fantastic. The only thing I would "warn" about is that they are not super chocolate-y, so if you are looking for a chocolate fix you probably will not get it here. They do however have a delicious flavor, are very moist, and excellent texture. Try them!

Grandma's Tomato Soup

This is basically a homemade version of campbell's tomato, with some noodles thrown in! Very comforting. I think to make it a 5 star dish it needs some personalization, but definitely a nice base for getting creative.

Butternut Squash Bake

This was a really nice twist on butternut squash! I think that the quality of the ingredients are very important in this recipe, I will try it again but with fresh breadcrumbs. Overall a nice way to switch it up squash.

Thai Peanut Noodle Stir-Fry

I made several on-hand substitutions on this recipe and it still turned out great. I used broccoli, onions, garlic, and frozen whole green beans for the veggie mix; I used beef stock in place of the vegetable stock; and had no sake or rice wine vinegar so I left it out completely. I reduced the brown sugar to 2T and the honey to 1T based on previous reviews, but next time I will probably try it with the full amount called for because the sweetness didn't really come through. I was unsure on the amount of spaghetti, as a standard package is actually 16 oz (I have never seen an 8 oz package?) I ended up boiling the whole 16 oz and used about 3/4 of it just eyeballing it for how much sauce I wanted. I also topped the pasta with thin sliced chicken breast. My whole family enjoyed it, including the 18 month old, 4 year old, and generally carb-averse husband! I was really worried about the beef broth being an issue, but it turned out delicious anyway. I look forward to making it "the real way" one day soon too!

Orzo with Parmesan and Basil

I found that this recipe lacked flavor. I made this for my husband's family and they seemed to really love it, though they tend to be picky eaters who love carbs and more traditional american fare, unlike myself. Fine for an easy side, but not impressive.

Cinnamon Roasted Sweet Potatoes

Really delicious. While I'm sure they would be great without the lime juice, it really adds that extra YUM and something out of the ordinary. I probably used more lime than the recipe called for, and will be extra generous with it next time too. I'll be making this for Thanksgiving!

Sauteed Swiss Chard with Parmesan Cheese

We loved this recipe. Even my 4 year old ate it happily! I just left out the wine because I didn't have it on hand, but cooked the onions/garlic a little longer to caramelize it a bit. Delicious, I look forward to trying it including the wine too.

Coconut Macaroons III

This recipe has a delicious flavor. I made these for a party with a friend who eats gluten free, substituting the regular flour for GF oat flour, and have also made them with whole wheat flour. They are always a hit with everyone who has one. The reason I gave it 4 stars is that I find them a bit heavy, and am still searching for the "perfect" macaroon recipe; I will continue to make this one though as it is a crowd pleaser and quick to make for potlucks, etc.
