Very nice :). I didnt have the heavy cream so i used egg nog! and i dint have pecans so i used crushed almonds (although im sure the pecans would have been a LOT better) but the almonds still tasted good and I got raves about the recipe. It was great! I'm sure my 8 y/o would have loved this as well!

Chocolate Chip Shortbread Cookie Logs

yum! I made mine into 1" balls and flattened them. Then I dipped half the cookie in the choclate/shortening mixture THEN rolled the edge of the cookie (with the chocolate on it) into crushed candy cane.. drooool. If you like mint chocolate then you will love the candy cane on it :) Thanks for a great cookie recipe!

Big Soft Ginger Cookies

YUM! I didnt have the cloves.. I used 1 tsp cinnamon and 1 tsp allspice. I also put raisins in half the mixture. And I chilled the dough for a few hours. They tasted wonderful, almost like a cross between gingerbread and pumpkin pie. I make them about half the size as what is called for.. more kid friendly i think :)

Busy Day Chicken Rice Casserole

This recipe was yummy! My 8 year old gobbled it all up too :). (The normal long grain rice cooked well so I dont think the minute rice is necessary as previously mentioned) I didnt have onion soup mix so i just added onion salt and beef boullion to the recipe.. was great!

Chicken Enchiladas II

When I first read this recipe I thought it sounded strange and would turn out soggy, but everyone said it was great so I gave it a shot. YUMMM! This was sooo good. And wasnt soggy at all. The tortillas turn out almost pastry like.. the filling is to die for. Im going to make it for dinner again tonight! :)

The Best Rolled Sugar Cookies

I've made these a few times, very yummy but they need to have the icing, I like the 'Butter Cream Frosting II' on them. The dough freezes well too... Tonight I thawed out the dough and made thump print cookies then filled the 'print' with an apple sauce mixture that I made (heat in a small pot apple sauce, add corn starch til thick.. add cinammon, nutmeg to taste). These tasted just like mini mcdonalds apple pies, I recommend it.. yummmmm (i also drizzled icing sugar on them when they were cooled)

Mom's Carne Guisada

This recipe was really easy and really good. I didnt have enough beef so I combined it with cubed pork as well. My 1.5 year old loved the meat while both my husband and I loved everything. It was really good with a flavoured rice/brown rice mixture. (wild mushrrom Sidekick)

Baked Teriyaki Chicken

Yum! I didn't have the ginger so I left it out. I did, however, add about 1 tsp of sesame seeds. My husband and 15 month old daughter loved it, I know that if my 7 year old was home she would have loved it too! I used chicken breasts cut in 1/2 instead of thighs, this would make some yummy wings as well!

Easy Soda Cracker Bars

Could this be easier and yummier! the crackers are really good in this too. Ive tried to spread the cracker mix onto the bottom of the pan but it would never fit so i increase the crackers and butter a bit.. adding about a 1/2 of what was called for again... so about 1 1/2 c. crackers and 3/4 c. butter. Once, for a variation, I also added about 1/4 c. of peanut butter chips as well. YUMM

Butter Cream Frosting II

Yum. I melted some chocolate chips and put them in the frosting. Was good on my german chocolate cake. I also sprinkled some coconut on top.

I tasted really good but I think next time I might make a montery jack cheese sauce to drizzle over the chicken and rice. Everyone liked it though and its really really easy

Mom's Zucchini Bread

This recipe is really good. I added raisins (soaked) to mine and took out the nuts. I cooked them like muffins for about 25 minutes until the edges started turning a bit brown. they were really yummy..kids loved them too
