Banana Crumb Muffins

These are phenomenal. After seeing the reviews I doubled the topping needed so that I would have plenty for all of the muffins. I have muffin top, mini muffin and regular muffin pans, and the muffin tops were by far the best because there was more surface area for the topping. DO NOT overfill your muffin cups, a little over halfway is perfect, because these will rise, and if they are too full the topping will just tumble off the top, which is not fun. Enjoy!

Broiled Tilapia Parmesan

This recipe was perfect after I changed one thing. The butter is totally not needed, otherwise the sauce slides right off the tilapia. I make the sauce and store it in a jar in my fridge and spoon out what I need as I need it. The flavor is absolutely beautiful My husband and I love to serve this over a bed of rice so we can savor every last bit of sauce. You can totally get away with using a lite or olive oil mayonnaise in this because there is so much other flavor it will not be noticed.

Swedish Meatballs (Svenska Kottbullar)

This was so delicious and easy to make. I have been craving the Swedish meatballs from Ikea and these blew them out of the water. The meatballs were so tender, even my finicky teen ate them and asked for more - SHOCKER - I served them with egg noodles and the gravy worked perfectly with them. Can't wait to have leftovers tomorrow. :)
