this recipe is absolutely amazing!!! i'm impressed =) it does produce such soft chewy delicious cookies!!
i halved the recipe & it still made lots of cookies...
here's what i did following others advice..
PREPERATION (for 1/2 the recipe):
*added 1 tsp baking powder, 1/2 tsp salt & 1 Tbsp vanilla
*i used an electric mixer throughout (except of course adding the chips etc.)..
*added the flour mixture gradually..
BAKING: i used the Pampered Chef stoneware, baking on the lowest shelf for about 13 mins (it always takes longer on stoneware..but i find it always bakes things so they're much softer/chewier etc).
*also used an ice cream scoop..
*flattened them, as they don't spread much by themselves...therefore you can bake them close together as well..
COOLING: removed from stoneware (pan), and put onto cooling rack right away...when cooled stored in airtight container..
FINALLY!!! experiment!!! this is a great recipe for variations...use different flavored puddings...add things like nuts, coconut, caramel chunks etc...it's just a great base recipe.
i divided up the dough, and did a few things all which worked well. i used Pistachio pudding (no it does not make green cookies!!!) my favorite combo was choc chips & caramel chunks...absolutely amazing!!!
