Easy Arugula Salad

I made for lunch yesterday and we really enjoyed. My only change would be next time to wait to do the dressing as the salad got a little wilted sitting in the fridge as we did not eat right away but the taste was still good.

Sunny Orange Lemonade

I really enjoyed this recipe but the men in my family hated the lemon & orange peel that was floating in the drink and insist that I leave it out the next time. Nice flavor though!

Feta Cheese Turkey Burgers

Thought we would try something different for supper and I had all the ingredients. The kids would not even finish their burgers as they insisted they had a weird after taste due to the feta cheese. Hubby thought they were just okay.

Butterscotch Chewies

These were very good first coming out of the oven per my kids but they were not too thrilled after they cooled. For me personally they are very very sweet but the kids enjoyed them when they were warm. It has been a few days and I still have cookies leftover which is not a good sign. Sorry

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

I made this for my hubby as he is the only one in our house that enjoys mahi mahi. He said if he could he would rate it a 10. I followed the directions to a "T".

Italian Confetti Pasta Salad

As written there is way too much mayo. I was hoping by the next day it would get soaked up a little into the pasta but that was not the case. If I would make again, the mayo would get cut down by a lot.

Dilly Romaine Salad

Very nice salad. I left out the onions (our preference)but kept everything else as written. We really enjoyed the creamy dill dressing. May use another reviewers advice and add grilled chicken to make as a main meal for those hot evenings when you just don't want to eat a big meal.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was not a favorite of mine but everyone else in my family really enjoyed. I used whole wheat fettuccine and doubled the sauce. We did not think that the sauce was runny at all but then again I cooked on a low heat and added the cheese while it was simmering. I also grilled some chicken and added it to the dish.

Candied Kielbasa

My son wanted to make some lil smokies for lunch but we were out of BBQ sauce. I told him I would find something on this site and came across this recipe. He loved how they turned out along with my husband. My only change was to make on the stove top and of course use lil smokies instead of kielbasa.

Zucchini Cake III

Made for dessert last night. The taste was wonderful and very moist. Followed directions exactly. I did not have to bake for as long as stated so watch your baking time. Big hit with everyone!

Beef Tenderloin in a Port Shiitake Reduction

I am rating this one for my hubby. He loved it. I am not a big fan of port wine but I made this more for him as he is. The sauce was too sweet for me (port is sweet) but the taste of the meat was wonderful and tender. I was told this is now his favorite recipe! I left the mushrooms whole as this was his preference otherwise followed directions to a "T". My youngest son also rated a 5. Thanks

Sesame Parmesan Zucchini

Nice flavor. After reading reviews, I just watched the cooking time as I thought 20 minutes was way too long also. I broiled the last minute or two and they came out perfect. I would cut the oil down next time as I thought it was a little too much. Hubby really enjoyed!

Coconut Macaroons

Kids loved these. I added sliced almonds to the dough before baking. When the cookies cooled, I drizzled melted chocolate over them. Tasted like an Almond Joy bar. Very good.
