One Pot Pinto Beans

This is a very good, easy-to-make bean recipe and leftovers freeze well too. I like that it's not necessary to pre-soak the beans. I made my mother's beans for years but they called for salt pork and these beans are tasty (and healthier) without the pork. I agree with other reviewers that 5 T salt is WAY TOO MUCH! I generally only use 1-2 t, depending whether I add the cheese and or pico de gallo or salsa, as both those ingredients contain salt. I never both to mash them as I think they look better served whole and don't resemble those nasty canned refried beans.

Gingery Carrot Salad

I made this dish exactly as written the first time and really liked the flavor, but my husband and I weren't wild about the texture of the cooked carrots. The next time I made it, I just shredded the raw carrots and added the dressing, and we liked it much better and it took less time to prepare. The flavor really does intensify if you wait 1-2 days before eating.

Slow Cooker Ham and Beans

We both thought this was tasty, but I followed the advice of others and only used 1/4 c brown sugar, and we wouldn't have wanted it any sweeter. I also substituted part of the water with beef broth. I forgot to soak the beans overnight, so I washed the beans and set the slow cooker on high for 4-5 hours, then on low for the remainder of the time, and they were fully cooked, so you don't have to worry if you don't soak the beans first. I will make this again and will substiture turkey kielbasa when I don't have leftover ham.

Refried Beans Without the Refry

I like this bean recipe very much: easy and healthy. I used to make my mother's bean recipe, then tried several other recipes on this site, and this is my favorite now. The beans don't take 8 hours on high to cook in my slow cooker, so adjust your cooking time accordingly. You can easily spice up the beans according to your family's preferences, and I don't bother mashing them. Superior to those nasty canned refried beans!

Cream of Peanut Soup

We love peanut butter, but we were disappointed. I made it exactly as written but did not sprinkle with peanuts because I was out of them. I would have liked more complex flavor but it tasted pretty bland. I think it needs some spices to make it more interesting.

Lentil and Smoked Sausage Soup

I thought the cayenne pepper overpowered the soup; I would use half as much if I made this soup again. I would definitely add more cabbage too. I used turkey kielbasa sausage instead of vegetarian, but doubt that altered the taste much. I have made many lentil soups and find this one to be very ordinary, so I am unlikely to make it again.
