Squash Soup

Nice, simple to make, tasty soup. I have a bumper crop of squash from the garden this year, so this recipe is a welcome addition to our menu. I did experiment with it a little and added some chicken stock and cream, used red pepper instead of green pepper, and added some carrots for some additional color and flavor. Since I have way more spaghetti squash then I do yellow squash, I used half and half of each. I also used sharp cheddar instead of Velveeta, and I used 3 cups of cheese instead of 2. Turned out great with a nice cheesy flavor and creamy texture. Great for dipping some fresh warm bread into.

Harvest Pork Stew

Great recipe! I added bacon/pork belly and doubled the herbs/spices. I started by cooking up some diced bacon (about 12 ounces). I then removed the bacon, drained off most of the grease to use in cooking the pork. I lightly seasoned the pork with some Applewood seasoning. The combination of bacon and the applewood seasoning added a great amount of flavor. At the end I added a little flour to thicken up the sauce. It was a little salty, so I recommend cutting out the added salt since there is plenty of salt in chicken stock, bacon and the applewood seasoning I used.

My Awesome Slow Cooker Pot Roast

Have used this recipe several times and it the best tasting pot roast ever! Searing the beef before adding to the pot makes a huge difference and I use beef stock instead of water. And the other great thing about it is that the kids love it too, even though they usually do not like anything beef unless it is in the form or a hot dog or sausage.

Slow Cooker Beef Stew I

Great stew. Instead of putting the meat directly into the crock pot, I coat it in flour and seasonings brown it in some olive oil before adding it to the crock pot. I then deglaze the skillet with some of the beef broth and add this to the crock pot as well.
