Tomato and Basil Pasta Sauce

I had 8 big beef tomatoes from my garden and decided to make baked ziti. I chopped the tomatoes and simmered it with the herbs in may garden thyme,basil,oregano, and rosemary. I did blended as well and added 6oz can of tomato paste to thicken it up. Haven't made fresh sauce in a while and this is delicious! This will make a great sauce for my baked ziti! Chill it up and you can have gazpacho by adding fresh diced green peppers and cilantro.

Chili Rellenos Casserole

This is a very good foundation recipe. Great for using up your left overs. I did not have evaporated milk so I substituted half and half to 2/3 cup and omitted the milk. Use 3 eggs. My filling I use my left over long grain rice, and beef brisket thinly sliced into 1" length, added a can of black beans, chives from my garden,fresh corn and salt. I also used fresh pablano peppers, seeds removed unless you like it very spicy. I pan fried the peppers in a bit of olive oil in a cast iron pan. After searing the bottom of the peppers I added the egg mixture, followed by my rice filling and used Chihuahua cheese. I had some left over roasted red pepper sauce and added that to my tomato sauce 160z. I increased the amount of sauce due to the filling. Cooked as instructed and put the cast iron pan right in the oven. So easy and delicious!

Joy's Prizewinning Trifle

This was a big hit after dinner. I made my own angel food cake. Angel Food Cake I by Syd. I also followed the advise of others to make the pudding according to the directions on the box and also soaked the bananas in the pineapple juice. I used strawberries, blueberries and bananas for a patriotic theme. It had the perfect amount of sweetness and the fruit makes this a very refreshing desert.

Chef John's Blueberry Muffins

The muffins were good. I added into the recipe 1 tsp. of lemon extract along with the lemon zest to enhance the lemon flavor. It was not very sweet, so I dusted it with powdered sugar. I made 6 muffins because that was the size of my muffin pan and the rest of the batter I baked it in an 8" square pan. My husband thought it tasted more like a bread. I have to agree. A little bit of butter and honey would be perfect.

Angel Food Cake I

I followed the recipe to a T. This came out to be the best angel food cake I have made. Not too sweet and it came out of the tube pan perfectly. I did use parchment paper on the bottom as one suggested. Then I used this cake to make a trifle with berries and bananas Looks darn delicious!

Grilled 'Fusion' Pork Chops

I thought I would give this a try as I always make my mother's reciepe, Southern style with lots of gravy and so delicious. But I wanted a change up. I found masala seasoning in my cabinet which must have found its way in the spice cabinet through my husbands travel to India. I followed the reciepe and marinated it over night. I did bake in a covered baking dish at 350 in the marinade. The masala seasoning is quite unique and very strong. The pork chop came out dry. Im asian, I am big on huge robust flavor and I like Indian food. But this was not for my palette. Sorry to say this is a thumbs down.

Coconut Cake II

I made this cake for my bookclub meeting. It was a hit. Personally, I thought it was yummy but I do prefer a lighter less dense cake. I added 1 8oz can of drained crushed pineapple and 1/2 teaspoon of salt. The frosting was delicious but a requires more work. You MUST consistantly whisk not stir while cooking the frosting otherwise it gets lumpy quite quickly. It was graining using regular sugar. Even though my cake was covered in coconut shavings I could still taste a wee bit of the sugar granules. I will try using powdered sugar next time. oh yes add 1tsp of coconut extract into the frosting and batter too.

Heavenly Angel Food Cake

A light,moist delicious cake and easy to boot! I am not a savy baker and I made this for work. Very Easy to bake. Everyone raved about it. I myself had only store bought angel food cake and was not a fan. Now I am! Great for diabectics and your waistline. You can have a treat without the guilt! I would like to try it with lemon extract and lemon zest.
