Baked Coconut Shrimp

I also tried this recipe with boneless skinless chicken breasts. It was very good! We have been trying to be more conscious of what we eat these days and the fact that this was not fried really appealed to me. My husband loved it as well and was glad for me to find a new way to fix chicken breasts! Can't wait to try it with shrimp!!!!!

Dark Chocolate Cake I

I will never use a box cake mix again!! This cake is rich and moist and dense. I made it as a Bundt cake which increased the cooking time to an hour or so, but it was worth the wait! I didn't even frost it, just drizzled a little glaze of vanilla and powdered sugar. I followed others' advice about letting the cocoa mixture cool. I also really creamed the butter to let it get light and fluffy...probably 8-10 minutes. The only ingredient change I made was to use Mexican vanilla because that is the only vanilla I buy. Also my children who don't have baking experience helped and found the recipe easy to understand and follow!! YUMMY!!! I printed this recipe and put it in my recipe book labeled "Mom's Birthday Cake" so they can make this same cake for me next year!!

Baking Powder Biscuits

This is a wonderful biscuit recipe!! The first time I made these, I was using them as a top to my Chicken and Biscuits and everyone devoured that. I did accidentally add 1/2 t. of baking soda that time but I just made them again this evening exactly as the recipe states and they are wonderful on their own! I live in the south and I have been making homeade biscuits for years but this recipe beats all. The biscuits were flaky and yummy on the outside and fluffy on the inside. I may increase the sugar and add cinnamon one time and use them for a breakfast biscuits to see how that turns out. I will update for sure. Thank you Catherine for this excellent recipe!

Oven Fried Chicken II

This was great! I have been looking for an oven fried chicken recipe that still tastes great. My husband asked me where I bought it!! I made it as the recipe requires except used chicken legs because that is what I had. I left everything else just like the recipe and it was delicious!!

Quick and Easy Ham with Sweet Potatoes

OMG!!! Why did I not think of this myself?? This was so good. I left out the pineapple because I forgot to buy it but it was so delicious anyway! I will try with the pineapple next time for sure although I am not sure it can get better! It was so easy! I used fresh sweet potatoes because they were on sale and I microwaved them for a few minutes so that I could get my knife through them and I just put a big slab of sweet potato on top of the ham and more brown sugar on top of that. I am sure it would be just as good with the canned ones but they weren't on sale that day (lol) If anyone tries the fresh ones remember to increase cooking time. Since its in the packet the ham was still tender and delicious even with the increased cooking time. I hate to review a recipe and say well I did this and that but I don't think the changes I made mattered much. It will be even quicker and easier the next time when I use the canned sweet potatoes and remember to buy the pineapple. I will definitely be making this again just as it is written. Thank you so much for a great recipe!!

Honey Butter Yule Ham

This recipe is so tasty and easy that I am ashamed to admit I didn't think of it myself. I usually don't review recipes that I have altered because I don't think it's fair to the person who submitted it, but I will make an excpetion in this case. My husband usually gets a giant ham from work every year for christmas. It is way too much to have for even Christmas dinner since we usually do a turkey also. It is hard to store whole so I always cut it up and divide between large ziplocks to fit in my freezer. For this reason I could not do the recipe exactly at it is written. I did not change the ingredients, just the method. I heated the honey and butter and cloves then dipped each slice of ham into the mixture and layered into my slow cooker. I poured the additional honey butter on top of the ham and put the cooker on low for all day. I am sure that this would be delicious cooked the way the recipe states in the oven, but I was worried that since my ham was in slices already that it might get too dried out. I must try it sometime with a whole small ham or spiral cut in the oven. I still can't believe its so easy and using my slow cooker made it even easier!

Red Velvet Cake I

I followed this recipe to the letter. I thought it came out moist and wonderful. The icicng was also wonderful. I did not have trouble with it but when it says "cream butter and sugar until light and fluffy" I actually did that. I creamed it until it was light and fluffy and then followed the rest of the directions. I did not need to beat it for 15 minutes as someone suggested. It was a wonderful, light, whipped icing that beautifully complimented the cake. Canned or even homemade cream cheese icing would have been too much for this rich moist cake. I took it to my sister-in-law's house for thanksgiving and everyone raved!

Gingerbread Frosting for Cookies

I thought this was wonderful!!! I used it to ice the "big soft ginger cookies" from this site. The only changes I made were to increase it to ice 48 cookies and I added a dash of mexican vanilla. The taste is delicious and the texture is perfect. It set within minutes so that I could pack them away before they were devoured!

Oven Potato Wedges

Mine also did not look like the picture; however, they were very good. I added a little fresh thyme and other Italian herbs and a sprinkle of Parmasan to the mix and I put it all in a zip bag instead of a bowl for ease of clean up and also to let the potatoes "marinate" in the oil and herbs. One mistake I made was to slice the potatoes too thin so that some of them ended up as potato chips and were too crunchy to eat. Also, before hand I rinsed the sliced potatoes to get rid of some of the starch since I used regular white potatoes. I will most likely make this again.

Barbecue Chicken Casserole

I thought this was very good. I left out the corn and added a little more brown sugar to the the sauce so it was almost like oven-baked sweet and sour chicken. I also added roasted garlic and fresh thyme to the sauce and made it an hour or so ahead so the flavors could get blended well. My husband and children ate it all up and my 5 yr old said that it was very good. I served it with glazed carrots and the Oven Baked Potato Wedges from this website. I will definitely add this one to my recipe box!
