Microwave Baked Potato

MUST be the best thing since sliced bread--especially for me, a pregnant woman in her first trimester, with all the cravings and no oven to fill them! I cooked mine in a 900-watt microwave (it acts like an 1100-watt) for 5 minutes, then turned it over, then 4 minutes. I also added a little water to my plate during the second run because of the reviews that said the potato could catch on fire. Thank you CJME for such a wonderful recipe!

BBQ Pork for Sandwiches

Absolutely THE BEST pulled pork I've ever had! I've taken this pork to a birthday party and a family reunion, and I get rave reviews every time. I never go home with much, even though I always double the recipe for company. The only reason I give this 4 stars instead of 5 is because I've been having a hard time choosing a barbecue sauce. I love Sweet Baby Ray's, but it's just too sweet for me on pulled pork; I liked pulled pork to have a kick. The best one in their line for this recipe is the Honey Chipotle version. Jack Daniels was a little too salty.

Simple Caramel Apple Pork Chops

Very tasty recipe! I've made this twice, and I think I'll add a bit more sauce the next time, so I can have some extra to drizzle over the rice I serve it with. The second time I tried cooking the apples with the pork chops, hoping the pork chops will taste more like apple. Don't do this please; the apples tasted like salty pork chops afterwards! :P Overall, a great recipe minus the need for extra sauce.

Slow Cooker Pot Roast

I love how quick this is to put together, and the seasoning combination makes for such an awesome gravy! I sliced up some potatoes and threw in some baby carrots along with the onions, and those were some of the best potatoes I've had for a while! :D I cooked it on High for 4 1/2 hours because I was pressed for time, and it came out just right, not too tender and not too tough. Thanks for such a great recipe! ETA: I still love this recipe as much as ever, but made it phenomenal with a few changes. For one, sear the meat. For two, instead of on High, I cooked it on Low like the recipe said. I still make it with potatoes--turns out perfect every time!

Sarah's Applesauce

Awesome recipe! I made this for the first time a couple of months ago, when my husband started getting sick and dehydrated from the vomiting. The doctor recommended a BRAT diet (bananas, rice, applesauce (!), and toast), and my husband, who is a meat person, wasn't looking forward to it. I made this recipe, hoping it would lift his spirits. I added extra cinnamon and 1/2 tsp ginger, to help with his stomach. He raved about it and felt better almost instantly! I'm making it again this morning because my husband and son both are feeling under the weather--this time doubling the recipe and using 11 small Red Delicious apples! Thanks so much!

Banana Sour Cream Bread

There's something very odd about this recipe: when I first tasted it straight out of the oven, I didn't really think it was any more fabulous than any other banana bread recipe I've tried in the past, but I had a tough time refraining from eating the entire loaf then and there! I made exactly as written, except I don't have any 7x3 pans. I made the bread in one 9x13 pan and one 9x5 pan, and filled them up even with each other. The 9x5 cooked in about an hour, and the 9x13 cooked in about 1 hour 5 minutes. I think that the bread really does need the crumb topping that so many other reviewers were suggesting; it was delicious and moist, but lacking that "wow" factor.

Iced Mochas

Absolute GENIUS!!! My husband and I love Starbucks' and even McDonalds' iced mochas and iced coffees, but they're so ridiculously expensive! A cheaper alternative for a while was to buy International Delight Iced Coffee, but even that was expensive--half a gallon for four bucks or so! Now, I can use stuff I have on hand and just buy the syrup--waaaaay cheaper, and my husband is in love with this stuff! I made a caramel version with caramel syrup, and it was sweet, but still awesome. Thanks, Wendycain! EDIT: I made this iced coffee again today, but instead of freezing the coffee cubes, I just mixed it up with some coffee that had cooled off, and mixed it up in a big 4-cup measuring cup. (Make sure you put the sugar in with the coffee first and stir well; if you put the milk in at the beginning, it'll be too cold to dissolve the sugar.) I made it with the carmel syrup again, and added an extra cup of coffee to the original 1 1/5 cups so that it wouldn't be super sweet. Then, I poured over ice to still make it iced coffee. A little less fuss and planning, and still awesome!

Banana Pancakes I

Great tasting pancake! But medium-high heat was too high (maybe it's just my stove; it's only about 7 months old). The first pancake burned, so I had to turn the heat to medium, almost medium low. Made the pancakes perfectly golden, and they had awesome banana flavor! Going to try with cinnamon next time, and maybe some peanut butter syrup another reviewer suggested.

J.P.'s Big Daddy Biscuits

Very quick and easy biscuit! A little on the dry side, but it's a biscuit--I can understand that it's not going to turn out like a moist, rich cake or something! To help with the dryness, I just brush with plenty of butter. :D Overall, a great recipe!

Downeast Maine Pumpkin Bread

Oh. Wow. Has to be the best bread I've ever had. My mother in law is diabetic, but she couldn't restrain herself from having an extra piece or two with her morning coffee! It's a nice change from banana bread, especially because she's allergic to bananas. Pumpkin may be traditionally meant for the holidays, but I'll gladly make this any time of year!

Cream Corn Like No Other

Everyone I've served this to can't help but say "wow!" It's an awesome recipe--sweet and rich and yummy! What I like about this versus canned creamed corn is that you can make it the exact consistency that you want. If you like it saucy, cook for less time; if you don't want any runniness, just cook it longer.

Ultimate Twice Baked Potatoes

I served these twice-baked potatoes alongside the baby back ribs recipe from this website. My husband was in love. Instead of baking the potatoes in the oven (I had to use the oven to slow-cook the ribs), I cooked them in the microwave; it didn't compromise the taste at all, and it was much quicker. When I was done using the oven for the ribs, I put the potatoes in to melt the cheese and heat through. I think we could've made a meal out of this, and we would have if we didn't have the ribs to eat, too!

Broiled Tilapia Parmesan

So ridiculously easy, and so ridiculously tasty! My husband isn't big on fish (he likes red meat more), and anytime he does have fish, he swears he has to have it with tartar sauce. No tartar sauce with this one, and he was sad there wasn't any left! I've never seen him so enthused about fish! As with anything broiled, keep a close eye on it. I cooked for 2 min on one side, 2 min on the other, and 2 min with the cheese mixture.

Shrimp Scampi Bake

Very different tasting with the Dijon mustard--not sure if I like it yet, but my husband did, so that's good enough for me. After baking, I served it on pasta and tossed to coat the pasta with the sauce.

Fried Rice Restaurant Style

Very, very yummy! Husband said it's the best fried rice he's ever had! The sesame oil really is necessary with this recipe--thankfully I keep it on hand when I make my Asian-inspired pork chops, which is what I served this rice with. It adds a delicious nutty flavor you just can't beat.

Awesome Slow Cooker Pot Roast

Not really as fabulous as most of the other roasts I've made in the slow cooker. Plenty tender, but not really flavorful. Maybe I should have used wine like the other reviewers suggested, but I don't keep it on hand because we don't drink wine. I probably won't make it again.

I was surprised at the sour cream, but it turned out really well! My only complaint with this recipe is that it ended up watery on the bottom--not sure why. Still a tasty recipe; I'll definitely make again.

Pecan Pie V

I made this for Thanksgiving. I liked it a lot, and I usually don't like pecan pie. But my family didn't like this as much as the traditional recipe. For that reason, I probably won't make it again, unless I want some for myself!
