Easy Cajun Jambalaya

We loved this recipe. It is delicious and so easy to make! It is a good base, and ingredients can be played with. I added our own homemade "Cajun Spice Blend" in place of the dried items, because we like our food on the spicy side (hence the 4 stars, not 5). I also use Chicken Andoulle sausage in place of the kielbasa. Definitely a new favorite in our home.

Spicy Burgers

These were pretty good burgers. Since it is just myself and my husband, we cut the recipe in half to make 4 burgers - and froze 2 of the patties for another day. The only thing we did differently was substituted 2 cayanne peppers from our garden for the fresh peppers in the recipe.

Turkey Shepherd's Pie

This was really good! My husband adores shepard's pie and I had never made it before. This was so easy to make, and there wasn't much cleanup, either. We had no carrots so I skipped that, and I used a bunch of dried wild mushrooms. I also added worstescire (sp?). Will definitely be making this one again.

Lazygirl's Ground Turkey Stroganoff

I gave it four stars because (personally) I thought it a little plain for my taste. My husband, however, loved it! The recipe was very easy to make, and a good, hearty, hot meal. Cleanup was easy as well. I had to use farfaille (bow tie) pasta because we didn't have any egg noodles. I will be making this again.

Easy Garlic Ginger Chicken

Very easy! Made for a quick dinner when I had no idea what I was going to make and had to act fast. Unlike some of the other reviewers, we liked the lime flavor. I added a little extra ginger. Will be making this one again, definitely.

Black Bean, Barley and Turkey Chili

Yummy! My first attempt at chili-making. Instead of bell pepper I dumped a can of diced ortega chilis in, and I used plain diced tomatoes (no chilies). Also added a few dashes of Tapatio to spice it up a bit. Next time I make this I will use more garlic (maybe 4 cloves instead of 2). This made a good-size batch, since there are just two of us we froze the rest for another day. Will be making this one again.

Pollo Fajitas

Really good fajitas! I never would have thought - soy sauce??? But really it's delicious. I added some salt to the marinade. All it needed was a little salsa and cilantro on top, some Spanish rice and salad on the side.... very easy dinner, and well-received. Will be making this again!

Cranberry Pumpkin Muffins

My 3-year-old is enjoying them, however I find them to be a bit on the bland side. If you get a bite with cranberry in it, they taste okay. Not sure I'll be making these again.

Beans, Some Like It Hot!

These beans are great! Even my 3-year-old loves them. After making this recipe a couple of times, I was able to settle on a version that suited our family's tastes a bit better - I use green curry paste, cut the turmeric to 1 tsp, and the chili powder to 1 heaping TBSP. We love eating it over jasmine rice, and sprinkling scallions and cilantro on top.

Raw Hummus

This recipe was very time-consuming, labor-intensive, and it came out bland. It says to add 4 cloves of garlic - I added 7 and it still tasted too bland. Oh, and it burned out the motor in my food processor. Boo!

Chocolate Cupcakes

This is a great cupcake. I was able to make 19 using this recipe. Used a basic buttercream on top. One change I made - I wanted them reallllly chocolate-y and rich - was I folded in about 1/3 of a bag of chocolate chips before I poured the batter into the cups. These would probably be good even without the chocolate chips though. My daughter is an extraordinarily picky eater, quite the critic, and immediately gobbled one up. Will definitely be making these again. Thank you!

Turkey Pot Pie I

We really enjoyed this recipe. I made ours with a whole wheat crust, and added a handful of frozen peas to the mix. I baked it in a regular glass pie pan, so there was some filling left over, which we froze for future use in "pocket pies."

Slow Cooker Chicken Creole

This was a good, hearty meal - and so easy to put together! I've been needing some good crock-pot meals for those busy days where I don't have the time or inclination to cook when I get home. Didn't have Creole seasoning so I threw together a little Cajun mix: onion powder, thyme, cayanne, salt, pepper. Did not add bell pepper or mushrooms and it was still good. I served this over rice (next time I will add a little water or chicken broth to the mix so it can soak into the rice a little more) with a salad on the side. Will be making again!

Iced Pumpkin Cookies

These cookies are awesome! Soft and chewy, with a good amount of spices. My family loves them! Didn't change a thing - but was thinking it'd be interesting to make a whoopee pie-type of creation sans icing, and with cream cheese frosting in the middle.
