Jamie's Cranberry Spinach Salad

Oh my gosh. This is in the top 5, salad-wise. I used 2.5 tablespoons of sugar instead of the 1/2 cup the recipe calls for, toasted the almonds in olive oil instead of butter, and used canola oil instead of vegetable. WOW. The toasted almonds made it fragrant and delish.

Szechwan Shrimp

It's so quick/easy to make and delicious. I grated some fresh ginger instead of using ground, and sesame oil instead of vegetable oil. I love using sesame oil in "Asian" dishes -- it's so much more fragrant than vegetable, canola, or even olive oil. If you've never tried it, you must try it. I also doubled the sauce and added a 1 lb bag of frozen mixed veggies. YUM!

Addictive Sweet Potato Burritos

The beans are tasty, but the sweet potato is just bland (gee, I wonder why, no spices). If the beans aren't evenly distributed in a burrito, any bites of burrito that happen to contain all or mostly just sweet potato are blah.

Cajun Crawfish and Shrimp Etouffe

Wow, this one was a real treat! I lived in New Orleans for a few years, and this really took me back. Absolutely delicious, even better as leftovers! I used chicken stock instead of fish (that's what I had on hand), all shrimp and no crawfish, butter instead of vegetable oil, and only added a couple dashes of tabasco (instead of 2 tbsp + cayenne, since hubby doesn't do spicy). Even cutting the hot sauce waaay back, it was still a little too spicy for him. Go figure. I do think it would've been too spicy even for me, if I'd put in 2 tbsp of hot sauce, and I love spicy. Delicious, definitely a keeper!! Thank you so much for sharing it, Rhonda!

Tomato Basil Salmon

I put sliced tomatoes both underneath and on top of the salmon fillets. I thought this dish was just okay -- a bit bland for me. My husband loved it, though. Granted, he loves salmon. Me, not so much. I baked 4 fillets, he ate 3, I ate 1, and he practically licked the baking pan clean.

Honey Cornbread

The boyfriend loves this -- he can't quit eating it when I make it. For me, it's a little too soft and cake-like -- I like my cornbread grittier. Quite delish, much tastier than any store-bought honey cornbread mix, easy!

Veggie Pot Pie

I used (2) 9" round pie pans instead of a rectangular one and added an extra tablespoon of cornstarch based on the other reviews, and cut back the water a little bit. I also used 2 packages of refrigerated dough. It worked out great! Tastier the 2nd day than the first!
