Super-Delicious Zuppa Toscana

Tuesday Nite.....Kroger's was out of Kale, had just used my supply for sauteed side dish on Sunday. No biggie. Used spinach. This is similar to another soup I make that has pinto beans in it. I cooked according to recipe....Hubby and son loved it. It's all gone! Now, here is for the sticker shock for all you Zuppa Toscana purists. I am, as you know, a true Southern choc-o-la-te lady (Dora the Explorer taught me how to say it like that!!!)So, don't be mad....but I ate mine with.....wait for it......cornbread!!!! I know I know. It's an Italian soup! But, that broth just begged me for a chunk of cornbread. My son doesn't eat it so he had good ole fashioned (frozen brand) garlic sticks. Oh my, it was truly delicious though. Comfort food for my soul!

Johnny Marzetti Casserole

ok, on my family weekday menu board under Monday I wrote "Pasta Bake". Yeah I renamed this dish cause ....well, just cause Tuesday had Zuppa Toscana next to it! Just the facts, Ma'am! Anyway, today is Thursday and I just finished the LAST bite of "Pasta Bake". Everyone. Put. Down. The. Hamburger. Helper. Boxes. For the cost of buying pasta and meat that will last so much longer than that box this recipe is worth stocking the ingredients. I cooked as written except did not add the extra cheese on top. No biggie, it was cheesy without it. What I loved the most is the fact that the entire pan is gone! Gone gone gone! We ate it all. It has such a great body it holds up well for leftovers in the frig. I just added a salad and breadsticks for a great meal. Oh yeah, I always kick the seasonings up with herb mixes regardless of recipe lists for this type of dish. Do You!

Chicken Danielle

I cooked this for dinner today. My husband says it is a keeper. I think I enjoyed the consistency of the sauce more than the taste of it. It is creamy and great with the toast I made from Italian bread. I used boneless thighs instead of breasts. Just my preference.

Sweet Potato Pie I

I just took it out the oven 20 minutes ago on our Family Movie Nite snack break. I made it because my husband requested a SPP. I had NEVER baked one before. He loved it...eyes closed mmmm mmmm mmmm loved it!!! I did use 1/2 brown- white sugar and cream instead of milk. Also, I don't like cinnamon very much so I omitted it. He's had two slices, I packed 2 for his lunch tomorrow (his request) and there are 4 pieces left. They will be gone by this time tomorrow! Thanks from TN!

Great recipe. But, I got fruit loopy! Next time I will stick to basic recipe. Too much fruit soaked up the liquid. But it looked pretty!
