Chicken Tikka Masala
This is a good base recipe, but instead of messing around with 2 t of this and 1 t of that, I made my own tandoori masala and garam masala. Substitute 2 T of tandoori masala for the marinade. When simmering, use 1 1/2 T of garam masala. Better than any restaurant.

Gourmet Mushroom Risotto
Very nice recipe. I agree with Naples, the secret to a great risotto is time. I took about double the time to absorb all of the liquid. Also, if you like a "meatier" risotto (like I do) discard the stems and thick slice the portobello mushrooms. A tablespoon of pure Canadian maple syrop when cooking the mushrooms also adds a bit more flavour.
