Sturdy Whipped Cream Frosting

Reviewed: Mar. 20, 2010
I gave this 3 stars because the flavor was great and it could have actually frosted a cake or cupcakes. Unfortunately, if you whip this too long, looking for a frosting that is actually slightly stiff (just a little!) it will curdle and be completely ruined, which is what happened to me. The stiffest I could get it was just not a texture I was happy with for frosting. But, again, the flavor is fantastic.

Mom's Buttercream Frosting

Reviewed: Feb. 5, 2006
This frosting is smooth, pretty, easy to work with and most of all delicious! It's not too sweet at all and the consistency is really special. You do have to do it right, make sure that your "paste" is nice and thick and then whip the heck out of it, but it's worth the extra effort.

Queijadas

Reviewed: Dec. 15, 2004
Perfect, I have been looking for the right recipe for Queijadinhas (as I knew them in Brazil) for ages and accidentally stumbled on this one. This is the best recipe for these I have found, just like I remember. For the naysayers...they are supposed to fall down in the middle, more of a custard tart than a cake. They do stick, but not if you use plenty of Pam and let them cool before removing. If you get hockey pucks, try filling the cups more...you should get only 18 from this recipe, if you get more, you are not filling your pan enough. Put the zest of 1 lemon in, or try some coconut instead, I've never had these plain like the recipe says, lemon or coconut make perfect compliments. I guess these are not for everyone, but anyone who doesn't like this recipe must not have any clue how these are supposed to be, these are just right.

J.P.'s Big Daddy Biscuits

Reviewed: Dec. 5, 2004
Absolutely the best consistency I have ever tasted in a biscuit. Simple and easy to make, and they taste great, too. I see what the others mean about a little bitterness, but as long as you put anything on them (even a little butter) that taste goes away. I would scale back a little on the baking soda, and I might even TRY that next time, but I am too afraid of killing the texture, it's so perfect!

Fruit Oatmeal Cookie Bars

Reviewed: Nov. 16, 2004
These tasted pretty good, not too sweet, which I really liked. Extra points for being SUPER easy and using items I keep on hand. Try throwing a little cinnamon in the oat mixture and using Apple Butter instead of jam, was very good this way!

Jay's Signature Pizza Crust

Reviewed: Nov. 15, 2004
This pizza crust was perfect, it tasted exactly how a pizza crust should! I rolled the edges over string cheese sticks (make sure you roll it well to seal it in) and made a stuffed crust pizza that was better than any you can have delivered!

Was the tenderest, flakiest crust I have ever had. It was a little hard to work with, but worth it.

Cheese Garlic Biscuits II

Reviewed: Nov. 29, 2003
These are really good. I doubled the salt (only needs it if yu are really into salt, like my family!) and added 1/2 cup of parmesan. I also put a little parsley into the garlic butter. Texture inside is just like in the restaurant.

Deluxe Waffles

Reviewed: Nov. 24, 2003
I'll be using my waffle iron a lot more! I'll never buy the "boxed" stuff again. My 2 and 3yos gobbled them up. I had a brain freeze and forgot to whip the whites, just folded them in and it was still fluffy and soft, can't wait to try them made right.

Brigadeiro

Reviewed: Nov. 23, 2003
mmmm, I LOVE brigadeiro! I find it really helpful to cool this in the fridge before forming the balls. Also, you really want to roll these in chocolate sprinkles afterward to make brigadeiro. I made them for a party and just reformed the chilled balls really quickly before displaying them, they were perfect, just like I remember in Brazil. Very pretty dessert. Hint: I used Strawberry Nesquick to make them pink for the kids' valentines parties. They were great. I imagine you could use any of the flavors of powdered Nesquick.

Carnation® New England Clam Chowder

Reviewed: Nov. 23, 2003
This was awesome! It was my first try at a clam chowder and I am glad I picked this recipe. Rich, thick and hearty....and beautiful, too. Hubby thought the veggies should have been cooked more, so you couldn't pick up the texture, but I really liked the little bit of textural variety.
