About this Cook
I am a twenty-one-year-old personal trainer living in Texas with my husband and our lunatic animals. I only started cooking about a year and a half ago, but I have been baking for years and consider baked goods (primarily desserts) my specialty.
My favorite things to cook
Because of my career and the fact that my life revolves around fitness, most of the things I make are low calorie or at least as healthy as I can make them. I love finding ways to make healthier desserts that don't taste like cardboard. I also love cooking with chicken. If I could pick one ingredient to cook with for every meal, it would be chicken.
My favorite family cooking traditions
Breakfast. Everyone in my family is a breakfast food connoisseur. Never has there been better french toast than what comes out of my family's kitchen, and I make some pretty mean pancakes.
My cooking triumphs
All of my desserts have gotten a lot better and I'm now at the point where I feel comfortable to take a base recipe and make some pretty serious changes to it.
My cooking tragedies
Anything involving pork. It also took me an embarrassingly long time to learn how to cook minute rice. Yeah. I know.

Extreme Chocolate Cake
This is my favorite chocolate cake recipe. I made it for my husband's birthday and it turned out amazingly. I only make about half of the recommended amount of frosting, though, because even with two layers I ended up with a giant bowl of extra frosting.

Flourless Chocolate Cake I
I love this cake. I followed another reviewer's advice and used three eggs and three egg whites, and I also added in a bit of mint. It turned out to be absolutely delicious. I had a bit of trouble getting it out of the pan after it had set overnight, and once I did get it out, the bottom had melted a little bit. Fortunately I had taken it out of the pan with enough time before I needed to serve it, so I just smoothed out the top and put it back in the fridge. It stiffened right up again, so no serious issues there.

Whipped Cream
This recipe always works really well for me. Never had any issues with it. It's simple, light and perfectly sweet without being overly so, so it makes a nice addition to really dense or rich desserts.
