Baked Haddock

Reviewed: Dec. 15, 2013
Very tasty and definitely a repeat. QUICK as well :) Added garlic powder to the breadcrumbs, used soy milk and egg mix, and heated the pan before putting fish in per other reviews. Haddock was thick so I gave it 25 mins total at 500, last 10 covered in foil to prevent burning.

Fisherman's Pie

Reviewed: Nov. 16, 2013
Enjoyed this fish recipe a lot! I adapted it to non-dairy by eliminating butter and using almond milk instead of cows milk. Divided between two dishes and used spinach in one and peas in the other. Good reception from the family, and will use soy milk next time! thanks!!

Serbian Cevapcici

Reviewed: Nov. 10, 2013
Big hit : named instant repeat by the family and second helpings for our girls. Followed the recipe, with a couple of changes: I halved the pepper amounts. I used 1lb each of beef, lamb, pork. One set of sausages was .75 beef and .75 lamb with 1/3 of spices mixture (for family who don't like pork), the other set were 1.00 pork and 0.25 beef and 0.25 lamb with 2/3 of spices mixture (for me who likes and pork and more spicey!). I baked at 350F for 42 minutes and they turned out great! served with zatziki, pita bread, fried onions, peas and green beans.

Haddock Marinara

Reviewed: Nov. 9, 2013
Very tasty result with instant thumbs up from whole family. I put in about triple the garlic, used 2 lbs of Halibut fillet, one whole onion, and split it across two baking dishes. With extra fish I did 30 mins + 10 mins. I put non-dairy cheese on one, and cheddar on the other for the last 10 mins, with extra to sprinkle over the plated dish. Did a rice pilaf dish and tons of broccoli. No one complained about crunchy onion :)

Perfect Ten Baked Cod

Reviewed: Jun. 8, 2013
Best baked fish recipe I have tried in a long time! Based upon many of the reviews: I added garlic, parsley and rosemary to the breadcrumb mix (instead of the crackers), with olive oil instead of butter, mix went onto 2lbs of cod fillets, with salt, pepper, lemon juice on them first, and wine added to pan. Baked 25 minutes. Polished off by the whole family for second time in a week ... and they generally don't like fish :)

Slow-Cooker Corned Beef and Cabbage

Reviewed: Mar. 19, 2013
I followed the recipe, except for using beef stock instead of water. Veges tasted great, and beef was good but after the 8 hours it wasn't fully cooked on the inside! Next time I'll omit the veges except the onion to ensure the beef gets the full benefit of the heat.

Creole Chicken I

Reviewed: Mar. 9, 2013
This is a definite repeat for our family! I made some adjustments: used crushed tomatoes (double amount), added Tablespn of garlic, 1 Teaspn of Cajun seasoning, 2 Cups of chicken broth, red bell pepper (instead of green) put the cooked polish in from the start with the chicken and ham, and used 2.5lbs of chicken breasts cut into 2in chunks. The spice level was SPOT ON for my wife and kids (I'll add some more to my bowl next time for a bigger kick!)

Yummy Honey Chicken Kabobs

Reviewed: Feb. 23, 2013
Yummy and I will try this again : the family finished off the remainder straight away which is a good sign. I only had time for 60 mins marinading and will try 3-4 hours next time. I added in crushed garlic to the marinade.

Jasmine Rice

Reviewed: Feb. 3, 2013
This rice was a good change from plain jasmine, but didn't have the herby flavor I expected. I will be adding more herbs next time.

Sweet and Sour Chicken Tenders

Reviewed: Feb. 3, 2013
Easy to make and very tasty! The chicken was a little dry, and most of sauce had evaporated, so next time I'll use double the sauce amount and try covering with foil for 20 mins of the 40 mins cooking time. Definitely a repeat!

Garlic Chicken

Very easy, quick to prepare and yummy. I doubled the garlic, and for my family I need to quadruple it next time to get a deeper flavor!! The acid test: YES the kids are taking the leftovers for their school lunch tomorrow :)

Blue Cheese, Spinach Meat Loaf Muffins

Reviewed: Jan. 13, 2013
Easy to make and a BIG hit with the family: it is now the Family Favorite Meal :) So good it's bee requested for a repeat next Sunday :) Three changes: I substituted goat cheese for blue cheese (due to a dairy allergy), put some ketchup on the top before baking, and I used a regular 12x cup cake pan which worked great for the portions as we all had two meatloaf cakes, and two each were left over the girls for school lunch tomorrow. Latest time I upped the Worcester sauce to give it even more tang. Yummy!!!

Baked Coconut Chicken

Reviewed: Jan. 6, 2013
This was an easy recipe and very tasty. I left out the butter due to dairy allergy in the family. Coconut taste came through well, but the ginger taste was very mild. Next time I'll add in ground ginger to both the coconut milk for the pre-chilling and the breadcrumb mixture. A repeat!

Easy to make, big hit with all the family!! I would add about 25% more coconut as it gets used up quickly in the prep process. Thanks for great recipe!

Beefy Beef Chili

Reviewed: Nov. 3, 2012
I made some modifications for personal preferences and it came out great, and well-reviewed by whole family! Excluded the beef stew and tomato juice and added a beef oxo cube and two cans of tomato juice. Used cans of black and kidney beans instead of chili, and reduced chili powder to 1/4 teaspoon to reduce the spiciness. yumm!

Pistachio Crusted Chicken

Reviewed: Oct. 28, 2012
The family loved it!! Easy to prepare and came out the oven moist cooked on the inside and crisp on the outside. I used equal amounts of breadcrumbs and "crushed" pistachios : I put the crushed nuts in a plastic resealable bag and pummelled them for a couple of minutes using a meat tenderizer. Err on the side of making more of the Dijon mixture.

One-Dish Rockfish

Reviewed: Oct. 21, 2012
Easy to make! The overall taste wasn't to my liking but I think we didn't care for the taste of the rockfish and the seasoning was actually very good.

Crispy Rosemary Chicken and Fries

Reviewed: Sep. 9, 2012
A quick and tasty recipe, enjoyed by the family but not Wow. I would say 4 stars : I used 2.5 lbs of chicken breasts cut into 12 pieces total. Next time I would cut cooking time to 50 minutes for the potatoes.
