Marinated Baked Pork Chops

Good stuff although I DID double the sauce amount for 4 one-inch thick, boneless chops. We were patting our bellies afterwards & had BIG smiles on our faces. We love it :)

Rach's Broccoli Casserole

I made this but didn't have "Ritz" crackers so I used a bread crumb/ butter topping & omitted the 1/4 cup butter the recipe called for. Reduced the recipe down to 4 servings & it turned out GREAT! Also used a cheese sauce instead of shredded cheddar because cheddar gets "oily" & separates when it melts unless it has a starch to soak up the oil...Thx 4 sharing =)

Buffalo Shrimp

Absolutely delicious! I DID dip the shrimp in an egg wash before coating with the flour mix to give it a "heaver" coating & it turned out great. I also added a little orange juice to the Buffalo sauce to add a little sweetness and cut back on the butter, squeezed with fresh lemon while hot & served with a home-made Blue Cheese Coleslaw & 5-Cheese Garlic Bread =)

Mama's Potato Salad

A very tasty recipe. Nice & creamy with good flavor. I omitted the pickles & added a few slices of chopped bacon and added some fresh, chopped broccoli I needed to use before it went bad. Everyone loved it. Thanks for sharing :)

Chicken Chimichangas with Sour Cream Sauce

GREAT dish! I made a "few" changes as most people do depending on "their" taste. I marinated the chicken in a Tequila-Lime sauce for 3 hours. I "slowly" fried the chicken in an olive oil, non-salted butter mix for around 10 minutes. I added the chicken to the spice/H2O/onion mix (used HOT mexican chili powder) after reducing for about 5-7 minutes. I made a Mexi-Rice and added that to the inside of my Chimis also. I DID NOT fry but baked @ 425 and turned half way for a total of 25 minutes...then added the sauce afterwards & heat in oven for 10 minutes after turning off. Will make again. Topped with lettuce & Roma Tomatoes...

Savory Grilled Potatoes

These were VERY tasty! I was hesitant to use mayo (as I'm not a big fan of mayo) but followed the recipe as posted with one exception...I added fresh rosemary to the potatoes as well. I didn't have heavy duty foil so I used 4 pieces of regular foil which worked out well. Thanks for sharing. A NEW favorite!!!

Mom's Zucchini Bread

I recently had zucchini bread for the first time. It was "store bought" and I was surprised how good it was! This recipe was easy to make & good tasting as well. I made 2 loaves, one in a glass pan and one in an aluminum pan. The bread from the glass pan was a little more moist. The bread was moist but not AS moist as I had anticipated it would be compared to the "store bought " bread. I didn't drain the zucchini as I was afraid it would be too dry. Non the less, I will be making this again. Thanks for sharing =)

Sweet and Spicy Green Beans

Great dish. I doubled the amount of garlic as we like more. Instead of garlic chili sauce I used a Thai chili sauce to give it a little more "kick"! A new favorite. Thanks for sharing =)
