I have no idea why this recipe got so many good ratings. The majority of even the 5 star ratings suggest changes. The recipe as is is bland. Like others have said, a good starting point, but not a 5 star recipe as is. I won't be using this recipe again.

Risotto with Chicken and Asparagus

This was my first attempt at risotto. I read some of the other comment and was concerned about the amount of liquid. I ended up using 2 1/2 cups (split in three) and it worked fine. I probably could have done the 2 cups. Other than that this recipes was pretty easy and straightforward. This was a really tasty recipe and I will def. make it again. I made it as a side dish so I left out the chicken. The recipes yielded a lot, I would think it is more than two servings even as a main. I also noticed the nutritional information seems very high, even for the large portions. When I put the recipe into a nutrition calculator, it came back less than posted on here (I did with and without chicken)

Jenn's Out Of This World Spaghetti and Meatballs

I added red wine to the sauce and cut back on the sugar as others suggested. It was ok but nothing great. DH thought it was a little bland. Meatballs were really good. Think I will keep trying other recipes.

Homemade Chicken Stock

This is the time I have ever made stock so I have nothing else to compare it to. I really liked the flavor especially for low sodium. I will definitely make again but may keep trying others.

Spanish Rice II

This is the second time I made this and really like it. I took suggestions from other reviews and cooked the green pepper and onion first. I added garlic and jalapeno to them. Then brown the rice. I also used chicken broth and some cumin. It was easy and tasty. I served ith Quick and Easy Mexican Chicken. I thought the rice was a little spicy but I used hot salsa with the chicken and that was way hotter than the rice.

Quick And Easy Mexican Chicken

We liked this. I took some suggestions from another review and cut the chicken into strips and I used hot salsa. I served it with Spanish Rice II. I would make it again.

Haddock Bubbly Bake

We really liked this (well we are Nova Scotians too). Unfortunately, I didn't read the rest of the reviews before making it and didn't saute the onions. Next time I will, they weren't cooked. I used low fat cream of mushroom and also added broccoli. Other reviewers found that the ingredients didn't mix, and the soup overpowered the fish. I didn't find that at all. As another reviewer said, I just can't give a 5 star to a canned soup recipe, however, we really liked it and will def make again.

Calypso Rice and Beans

I was very disappointed by this recipe. Like another reviewer said it smelled great while cooking, but ended up tasting bland. I reduced the cooking time and it still ended up mushy. I served it with Jay's Jerk Chicken and bbq pineapple. I won't try this one again.

Jay's Jerk Chicken

I loved this recipe. I used jalapeno with some of the seeds. It was a little spicy but not too hot. I also marinated overnight. The chicken was really tender. It had a nice flavor, none of the ingredients overwhelmed. I will definitely make it again. Too bad my side dishes didn't turn out as good. I served it with bbq pineapple and calyso rice, both of which I will not be making again.

Chicken with Asparagus and Roasted Red Peppers

I wasn't too sure about trying this but asparagus was on sale. I am glad I did, it was incredible. Definitely one of my favorite recipes and its healthy. I didn't change anything but I may try some of the other readers suggestions next time.
