Chewy Granola Bars
Very disappointed with the texture. It was so crumbly that it fell apart. The flavor is good the recipe is flexible (nuts, fruit, etc.) The problem is with the base syrup it seems. Perhaps adding a nut butter like peanut butter or almond butter might help the texture. If it would have held together as a bar I would have given it high marks. Its easy, good tasting, and flexible in add ins, but with its falling to small crumbles I'll be looking for a different recipe. After all I was looking for chewy granola bars not chewy granola crumbles.

Apple Strudel Muffins
Its a good recipe but a bit plain, so I spiced it up a bit more to my taste. I upped the spice by adding 1/8 tsp cardamon and 1/4 tsp nutmeg to the batter. I also increased the topping a little bit as well as upping the cinnamon to 1/2tsp. I also made it gluten free. I used 1/4 cup gf oat flour, 3/4 cup sorghum flour, 1/2 cup rice flour, and 1/2 cup tapioca starch. I also added 1/4 tsp each of xanthum gum and guar gum. Its still a bit to crumbly and next time I will up the xanthum gum to 1/2 tsp. I love baking muffins and this one is a keeper for me with the changes I made.

Very easy. I made it with duck egg whites and it turned out beautiful. I also used 1 cup of sugar like others recommended
