Mom's Favorite Baked Mac and Cheese

I made this this afternoon for Christmas dinner and I'm certainly pleased with how it came out. I was a little liberal with the ingredients and ended up using almond milk, but it still turned out really well. Like some people suggested, I used bread crumbs on the top of one of them and I think I preferred how that one came out. Great recipe!

Best Chocolate Chip Cookies

My friends loved it, so that's why I give this 4 stars, but I found it to be rather unpleasant. It was entirely too sweet, the sugar overpowered absolutely everything about the recipe. If I ever make this again, I would certainly use much less.

Blueberry Pound Cake

Absolutely fantastic. However, I did make some changes. I didn't grease the pan with butter or sprinkle it with sugar. I used 3/4 cup butter and 1 1/2 cup cane sugar. I added 1/4 cup apple sauce and 2 teaspoons of vanilla extract. But MAN, this is delicious. It came out a gorgeous golden brown and just like other reviewers said, I was shocked that it came out so moist and fluffy despite the thickness of the mixture. 5 stars, definitely.

Oatmeal and Wheat Flour Blueberry Pancakes

Absolutely delicious! I halved the recipe and substituted 1% milk for soy milk (I would have used almond milk if I had any left) and used applesauce instead of oil. I also added a lot more blueberries, and let me tell you: It tasted amazing. I don't know why I've never made my own pancakes before. And yeah, these do cook a little differently, so just watch the edges until you can get a spatula underneath the pancake without it sticking.

Sweet Cornbread Cake

This came out fantastically, I've had to stop myself from eating too many pieces. I made a few changes, however. I used 1/4 cup of melted butter and only 1 cup of organic cane sugar. I added an extra half cup of corneal and replaced the vegetable oil with 2/3 cup of apple sauce and a tablespoon of olive oil. Oh, and instead of honey, I used two tablespoons of maple syrup. And let me tell you, this cornbread is delicious. It doesn't have the same flavor as the traditional Southern cornbread I tend to prefer, but that's okay. It melts in my mouth and the flavor is still excellent. Great recipe! I will definitely make this again.

Health Nut Blueberry Muffins

It came out wonderfully! I made a few changes, however. I used all whole wheat flour and instead of including oat bran and wheat germ, I used 3/4 cup of quick cooking oats. I don't like walnuts and so I used finely chopped peanuts (although, next time, I think I'll exclude nuts entirely). I also used vinegar and milk instead of buttermilk and maple syrup because I couldn't find my vanilla extract. In any case, it came out very soft and delicious. I fully intend to experiment with this recipe. Definitely 5 stars!

Sweet Dinner Rolls

This came out wonderfully. I used almond milk and considerable less butter and sugar, and it still came out great! Next time, I might add a bit more sugar, but I can't complain about the taste at all.
