Thai Curry Tofu

This was excellent. My husband and I aren't huge tofu fans, so I cut it into really small pieces, and it was fabulous served over steamed rice. Will definitely make again.

Tropical Coconut Cream Pie in Coconut Cookie Crust

This recipe was easy to make and tasted great. The only thing I would do differently next time would be to cut down on the coconut...I would add 1/2 - 3/4 cup to the pudding instead of 1 full cup. I would also suggest refrigerating it overnight or for the 4 hours recommended so that the pudding and the whipped topping set. Otherwise, it was great and I would make it again.

Almond Mandarin Salad

This was excellent. Everyone loved this salad. I didn't have any hot dry mustard so I used dijon mustard instead and it still turned out great. I will definitely make again.

Sauteed Apples

THANK YOU for a great recipe that my family loves. I've made it a few times and it always turns out great. I've even used different kinds of apples as I haven't always had tart ones. It still tastes great. I also add pecan pieces and raisins to it for variety. It's a keeper!

Barbecued Beef

YUM! This recipe is incredible. And it makes the house smell so good as it is cooking. I broiled rolls in the oven with swiss cheese on them and then added the bbq beef to them. Everyone loved them and I will definitely make it again!

Land of Nod Cinnamon Buns

Yummy! These were great. Everyone loved them. Also, I added pecans and made frosting to go over them (2 cups powdered sugar, 3 tbsp. melted butter, 1/2 tsp. vanilla & 3 tbsp. milk) and they were definitely a hit. Will make again!

Beef Stew VI

Excellent and easy to make. I suggest making sure the meat is in smaller chunks so that it will cook in time. I had larger cuts and it took 2 hours and 45 minutes to become tender. Also, I added a sweet potato in place of one of the regular potatoes and it blended into the stew and make it thicker and added a bit of a sweet flavor to it. Yum! This recipe is a keeper!

Sugar Coated Pecans

Excellent. I follow this recipe exactly and it always turns out great. Also, it's great with walnuts and almonds as well. Put them in a ziplock bag in the refrigerator and they last a long time.

Spinach and Strawberry Salad

I always get asked for this recipe. The only thing I do differently is add more fruit - raspberries, blueberries, blackberries - and I also add sugar coated pecans or walnuts (from this site). Thank you for a great keeper!

Poppy Seed Dressing I

This is a great dressing for a salad that has fruit and nuts in it. I substituted orange champagne vinegar for the white and it was a creamy orange dressing. YUM!

Honey Mustard Dressing II

Awesome. I've made this several times and it's great as is...but I also use 1/2 prepared mustared and 1/2 dijon mustard to give it a little kick. It's great with lime juice as well.

Beef Enchiladas II

These are good, but they are very simple. Personally I like things with a little more flavor so I added some spices and green chiles to the meat mixture. Very easy to prepare.
