Glazed Ham

Macaroni and Cheese with Caramelized Onions and Bacon

My husband and I both enjoyed this. I used 2% Sharp Cheddar Cheese (because that is all I had on hand) and light Sour Cream. While I am not a low-fat cook, it was so flavorful with the bacon and onions, that I would use lighter cheese and less butter next time as well. Definitely add more bacon. I served it with Roasted Asparagus. A good comfort food meal and nice change from your typical Mac & Cheese dish. Oh, it definitely takes longer than the said 20 minutes to prepare. I think it took me about 45-50 minutes.

Candied Carrots

Very tasty. I just steamed a pound of baby carrots (uncut), then sauteed them in the butter/sugar mixture. We gobbled them up!

Spicy Sweet Potato Salad

Very good. I would add another jalapeno next time (could barely taste the 1) and I added celery for crunch. I think it's important to use a good brand of curry...it will make or break the salad. Good stuff!

Classic Waffles

Loved this! I used 3/4 cup of whole wheat flour (and then 1 1/4 cups white flour) I added a tbsp. of brown sugar and a little extra vanilla. My boys gobbled them up!

Butternut Squash Soup with a Kick

Amazing recipe. I love the kick but would definitely add 2 jalapenos next time (was very mild with just 1.) I used heavy cream in place of the evaporated milk only because it's what I had on hand (and it was delish!) I also like Dried Apple Chips on top for garnish. Going in my recipe box. Yum-O!

Chocolate Mint Candies Cookies

These were great! I tried making them with both Junior Mints & Andes Mints. They both were tasty but the Andes is prettier looking when swirled. I put them in the refrigerator and they were so good cold! Yum!

Chicken and Biscuit Casserole

Wow this was good! Comfort food on a rainy day...can't beat that! I used a little more veggies than called for so I used 3 cups broth and 2 cups half and half, and a little more flour than called for to thicken it. I used Rotisserie Chicken and bought store bought biscuits for the top, which worked fine, but next time I'll make the ones the recipe calls for. SO good!

Gourmet Caramel Apples

These were wonderful! They now sell Caramel "bits" which makes life so much easier (not having to unwrap all the individual caramels!) After dipping them in chocolate, I rolled them in crushed Oreo's. Would make great gifts! Loved them!

Mango-Pineapple Smoothie

Very good. I used what I had on hand...fresh pineapple instead of juice, frozen banana, fresh mango, nonfat vanilla ice cream and used coconut milk in place of the milk/cream of coconut. I also added about 1/2 cup of ice to make it thicker. Very yummy and creamy!

Best Steak Marinade in Existence

Very good. I'm a huge fan of using fresh ingredients so I used fresh garlic, parsley & basil as opposed to dried. Marinated our Filet's in this for about 3 hours and they were tender and juicy. Will definitely make again.

Fluffy Pancakes

Best. Pancakes. Ever. I have been making pancakes for years now to please my 4 year old who loves them. These are IT! I added 1 tsp. of vanilla because that's how we like them. Next time I'll double the recipe because we only got 8 medium sized pancakes out of the whole batch and I like to freeze them for my son to eat during the week. Thanks for the keeper!

Rosemary Ranch Chicken Kabobs

Have made this twice now. They are amazing. I double the sauce and reserve about 1/4 cup for basting while they are grilling. They are so flavorful and moist. I also grill peaches with this recipe (just toss cut up peaches with a little olive oil, wrap in foil, and throw on the grill while the kabobs are cooking) and the combination is so tasty. Will definitely be one of our regulars.

Sausage and Egg Tostadas

My husband LOVED this! I used Taco Shells because that is what I had on hand (also made it easier to eat) and I used Jimmy Dean Sausage Patties, chopped up into pieces. I also scrambled the eggs. Next time I'll make homemade salsa to go with them. Yummy!

Teriyaki and Pineapple Chicken

We thought this was delish! I marinated the chicken in Jamaican Jerk seasoning along with some Teriyaki sauce. We also grilled it because I'm not a big fan of sauteed chicken. Was very yummy...loved the kick from the red pepper!

Baked Yam Fries with Dip
