Red Skinned Potato Salad

Let's get this straight; I'm not at ALL a fan of Potato Salad. It's something I skip at every BBQ get-together all summer long...but after reading through this recipe and remembering that bacon makes everything better--I decided to give it a shot. TOTAL SUCCESS. I'm a "taste and add" type cook so I fudged a few things here and there (less mayo / fat free sour cream / plain yogurt) and added some additional Salad Supreme seasoning. I also only added the yolk from two of the eggs (I think too much is overwhelming)--it was DELICIOUS. This salad does taste like it came from a gourmet deli. It definitely needs the whole pound of VERY CRISP bacon (I ended up cooking the other 1/2 of the package after tasting)--and is even better the second day. Also good with shredded carrot added! Would make again!

Apple Pie by Grandma Ople

Absolutely delicious! I used Mac and Granny Smith apples. My only addition was to add 2 tsp of "apple pie spices"--Loved how crisp the top crust was! I'll be making this again for sure!

Grandmother's Buttermilk Cornbread

I quadrupled this recipe for a chili cook-off today at work and it worked FANTASTIC. Instead of bothering with a pan, I used a regular size muffin pan with paper liners. I took the advice of another reviewer and filled a gallon-sized zip-lock bag with the batter and cut off a small section of one of the corners--easiest way to fill the muffin tin, BY FAR. This quadrupled recipe yielded me approximately 60 individual servings. I baked as directed, at 375 degrees for 20 minutes and they came out PERFECT. This will be my go-to cornbread recipe from now on.

Zippy and Tangy Turkey Rice Soup

I can't believe this recipe only has 11 reviews! It's delicious! Are you looking to make soup with turkey leftovers but hate all that bland stuff that's out there? Me too. Thankfully, this is a great recipe that does not disappoint. Zippy is a great word for it--enough spice that it's 'kicked up' without being hot. After adding two cans of stewed tomatoes, I ended up adding an additional can of diced while the soup was simmering. I think next time I'll just opt for diced tomatoes as the stewed chunks seem too big in the soup. Instead of rice, I used 1/2 cup of Orzo that I had on-hand. Other than that, I followed the recipe over the course of two days. I made the broth the evening we had the turkey, refrigerated it overnight, skimmed the fat that separated, and then added all additional ingredients the next day. I already printed this and have added it to my trusty recipe binder in my kitchen. Thanks for the great soup M Vidito
