Greek Chicken Pasta

I initially prepared this as described, and I thought it was really bland. To take it from 3 to 4 stars, I added some more flavor: a tablespoon of balsamic vinegar, a handful of sundried tomatoes, and a teaspoon of paprika worked well. I also threw in a lot of kalamata olives, they're my favorite.

Lentil Chili

There wasn't enough liquid to cook the lentils and wheat--after half an hour of simmering, as stated, the bottom was burnt. I transferred to another pot and added 2 more cups of broth (beef, because I was out of chicken). And then I still ended up with a thick chili. So the amount of liquid is a major flaw in the recipe. The concept is delicious, though. A good base. I used a can of diced tomatoes, with the liquid, in addition to the extra broth added later. I also substituted coconut oil for vegetable and added a bit of nutmeg and coriander, and a generous sprinkle of cilantro, for a bit more complexity. I think the beef broth was a good idea, too--the bulgar wheat has a similar texture to ground beef, and beef broth gives it the flavor as well.

Lamb Stew with Green Beans

I added a clove of pressed garlic to the oil with the celery and onion, which I personally think was necessary, but I imagine the recipe as prepared is also very good. I also did not use the full 3 cups of water--I started with one and then added a little more as it thickened. The result was delicious! Excellent flavor, and was something different than the basic beef+potatoes+carrots stews I usually make.

To Die For Blueberry Muffins

These muffins made me famous in college! Blueberry muffins are my favorite, but I have also made them with chocolate chips, or dried cranberries and orange zest. This recipe is a great base for experimenting with other flavors.

Catherine's Spicy Chicken Soup

This is a delicious and easy-to-make recipe. For a less spicy, but still flavorful soup, I swapped 2 tbsp of chili powder for 2 tbsp of cumin. I also squeezed in the juice from 2 small limes.
