Tres Leches (Milk Cake)

This cake is good, but the best Tres Leches cakes I have ever made were made with good ol yellow cake mix and then the milks dumped on top!!! Add some Mexican vanilla in when mixing the milks and then 1/3 to 1/2 cup of Rum an it is the best!!! We get requests for this whenever invited to a party. Also, make the day before so it can soak thru the night!! This cake is the BEST after it has had a couple days to really soak up all the milks. Of course, in my home, it's almost always gone before those few days are up!!!!!

Doubly Delicious Peanut Butter Cookies

GREAT COOKIES!!!! I generally don't change a recipe from the get-go, but had to on this one out of necessity. I used real butter and only had about 1/4 cup of chunky peanut butter so the rest was creamy. Didn't matter. The cookies came out very good. Nice and chewy even when cooked a little longer than i should have. This will be my new peanut butter cookie recipe. My 3 sons can't get enough of them!!!

Homesteader Cornbread

My new cornbread recipe. I was actually just looking for a basic recipe to use as a base for cornbread dressing. I used the one off the back of the Aunt Jemima cornmeal bag yesterday and it was AWFUL. So, i turned to good ol Allrecipes today and found this recipe. Just enough sweetness. I cut back a little on the sugar since I was doing this for dressing, but will use the full amount when making cornbread for the family. Other than that, I followed the recipe and it was easy and tasty.

Marinated Grilled Shrimp

Good Stuff!!!I fixed this as a last minute recipe tonight using a bag of frozen peeled and deveined shrimp. It was great!!! The only change I made was to use balsamic vinegar because I didn't have red wine vinegar. We grilled and served over herbed pasta!! Great, easy and quick recipe. We'll have this one again!!

Beth's Spicy Oatmeal Raisin Cookies

This is my new oatmeal cookie recipe!!! If I were not married to my husband already, I would marry one of these cookies :) The only thing I changed was to use 2 sticks of real butter instead of 1/2 butter and 1/2 shortening and I did NOT use the cloves or raisins due to personal preference. This one is definitely worth the 5 stars. Next time I will double cuz these will be gone in no time!!

Salsa I

I am addicted to this recipe!! It's so simple and easy as a base recipe. I always add lime juice and jalepeno. I have added fresh and jar jalepenos and they taste just fine. Put in seeds if you want some heat. Tonight I added 1/2 of an onion and processed it all really well in my food processor. My 2 year old son eats it like ice cream!!! This recipe, if followed precisely would not have any kick, however, you can add whatever you want and it's great!!!!! Very easy to throw together in a pinch too (if you have the cilantro which is a MUST!!)

Buffalo Blue Cheese Chicken Burgers

3 out of 3 people in my home loved these so i have to give them a 5-star rating!!! WE didn't change much about the recipe. We did NOT mix the bleu cheese into the meat, we didn't have onion so we used onion and garlic powder and I used about 1-2 tbsp. of buffalo sauce instead of 1/3 cup. The mixture seemed too mushy to add all of the liquid. I also let the mixture stand in the fridge for a bit before forming the patties, so they could set up a little. I think this was an important step. We grilled the chicken patties, grilled the buns, sprinkled the bleu cheese crumbles on top of the cooked patties and squirted more sauce on the buns. Dip in Ranch if you want to be really bad. All in all, I wasn't too sure about my first go-round with ground chicken, but these were MUCH better than expected and will be made again.

Popcorn Candy Balls

We just tried this recipe after looking for things to do with an abundance of marshmallows in the pantry. My son suggested trying CHOCOLATE marshmallow. I ended up using a whole (10 oz.) bag of chocolate and 1/2 bag of regular large marshmallows (or approx. 6 oz.). I probably ended up using at least 10 cups of popcorn (microwave) and cannot imagine the recipe with only two. I must say that these are surprisingly pretty good. They ain't pretty and I would suggest a very large pot and a strong arm!!! The kids will love them and we will try without chocolate marshmallows one day.

Mexican Rice II

This is great rice. We usually add a little garlic and I always add the rice and cumin toward the end. I think the rice is a little bland without more salt and cumin.

Great recipe. The only thing I change is the walnuts. Not sure if it's a regional thing or what, but I have never seen these cookies with walnuts. We always use pecans.

Fluffy Pancakes

These are the BEST pancakes ever!! They are true to the name and are fluffy. I have never been a pancake fan because they often tend to be doughy. We have this recipe stashed in a couple different places around the house so we can always find it.

Fluffy Two Step Cheesecake I

This is a really tasty dessert. My husband does not really like "cheesy" cheesecake and I certainly prefer the NO BAKE. This is the perfect blend!! We usually add a little vanilla. Can also be done with light cream cheese and light whipped topping. UPDATE:: I made this today and used the 1/3 less fat cream cheese and light whipped cream. I substituted Splenda for the sugar and put into a reduced fat graham cracker crust. You would never know the difference. I put all ingredients in my stand mixer and whip it all up. I see no need for a second cream cheese. I also set out various toppings for our guests. Chocolate chips, strawberries, chocolate and caramel sauce and some pecans so they could dress their own cheesecake!!

Potato Chips

How cool!!!!! My husband and I tried several different techniques with this recipe and they were all good. We cut red potatoes (that's what we had) by hand, with the box grater, and with a veggie peeler. We sprayed plates with PAM, put the taters on in a single layer and lightly sprayed again. We cooked anywhere from 3-7 minutes. You have to watch each batch and definitely wear and oven mitt when removing. I used both Correlle brand plates and Pfaltzgraff stonewear. The correlle did well, the pfaltgraff cracked!!! I salted the last batch before I put in the microwave and they were really good. I'm looking forward to making more of these. I like the ones that cut a little thicker. This is a totally fun thing to do with the kids, and healthier than your average fried chip. I think this is a recipe the chip companies don't want you to see.

Old Fashioned Sicilian Succo

My kids and I were looking for an authentic Italian dish after studying Italy. This one was great. We didn't vary from the recipe. The meatballs were great with the combination of pork and beef. It made a ton of sauce! I think I would probably cut back on a little of the tomatoe sauce next time, but we will make these meatballs again!!

Watermelon Cooler Slushy

This is pretty good. 1/3 cup of lime was a little too much so I would cut that back to maybe 1/4 cup. I also could have cut the amount of sugar due to the ripeness of the watermelon. My 3 boys really liked it and it was a great way to get a large amount of watermelon out of a crowded fridge, not to mention the fact that it's better for them to drink than kool-aid!!!

Easy Hummus

I have only tasted hummus a couple times and have certainly never made it, but was looking for a healthier dip for veggies. I didn't have jalepenos and used one tablespoon of the reserved liquid plus almost 1 tablespoon of extra virgin olive oil. It tastes great and was very easy. Will definitely be making again

Banana Muffins II

These muffins are really great!! We bake these everytime we have mushy bananas. I have substituted one individual applesauce cup for the butter and they turn out just as good, but with less fat!! I usually also add about a 1/2 teaspoon of vanilla and a sprinkle of cinnamon. I always make the mini muffins and you MUST increase the time by several minutes (if you want them golden on top and not mushy). The kids gobble them up!!

Creamy Herbed Meatballs

This was a great last minute dinner recipe!! I mixed the soup and water together before pouring on top and used a little extra water so all of my meatballs would be covered. I served over rice and my kids and husband all approved. We will definitely use this recipe again!!
