Hash Brown and Egg Casserole

I made this recipe for brunch today and it was really good. The recipe is a keeper. I took out about a cup of shredded potatoes because I thought the pan would overflow and made up another small second pan by adding another 3 egg/milk/seasoning mixture. Reduced the cheese from 12 oz to 8 oz and still perfect. Next time, I might experiment with adding cajun seasoning to the potatoes or pre-cook, as previous rating suggests.

I used all the notes in Corinne's recipe and I couldn't believe I actually made something that tasted this good. My husband and kids were extra happy!

Red Garlic Mashed Potatoes

Fantastic potatoes! Left out the sugar as recommended, used Smart Balance instead of regular butter and added a pinch of salt. Note: It took close to 20 mins for my potatoes to boil.

Quick and Easy Chicken Noodle Soup

Good thing I doubled the recipe! Followed others suggestions to saute veges first and cook pasta separate (as well as store for leftovers)-very good call. No other modifications. It's fabulous. Tastes good with parmesan cheese, too.

Cabbage Fat-Burning Soup

Tasty and healthy. Used spicy low sodium tomato juice for half and regular tomato juice for other half. Since the popular prepackaged dry onion soup mix which has MSG, I used a mixture of beef flavored granules, minced onion flakes, onion powder and celery salt. You can find several alternatives on the web.

Orange Peel Beef

Flavor was delicious and when kids like it,even better. I should have followed the previous suggestion to fry the beef a bit before throwing in the garlic,orange peel, and ginger because it did get kind of crispy before the beef did. Next time will add veges. Family says this recipe a keeper.

Mom's Zucchini Pie

When asked "should i make this again?" and the husband and kids vote "Yes, it's super yummy", the recipe receives 5 stars. The flavor was savory and not bland at all. Added the Dijon mustard, Parmesan, and used kosher salt. Only downside was I used the dough I had on hand which was Grands biscuits. This made the crust too doughy. Also, only used as much oil to needed to saute onion and zucchini. Make sure to drain veges before adding to egg mixture.

Lentils and Rice with Fried Onions (Mujadarrah)

Very yummy, even the kids liked it. Next time, will cook 2 to 3 onions-1 not enough and they are so good with the lentils. Added cumin, garlic powder and salt to lentils otherwise not enough flavor. Cooked rice and lentils separately as recommended to give more control over lentil firmness. Used non-fat greek yogurt instead of sour cream. I will make this again!

Spicy Spaghetti Squash

What a great way to satisfy the spaghetti craving if you are on a lower carb diet. My family is very picky and they said this recipe was a keeper. Only omitted the capers. This dish also tasted very good as leftovers!

Cheesy Stuffed Shells

Yum! This was a winner! Both finicky kids loved it and asked for more! I used 1/4 egg beaters instead of egg, 5 oz f spinach instead of 10 oz, used Classico Spicy Red Pepper sauce, thought even 1 cup of mozzerella was too much. Couldn't find pasta shells so used 12 manicottis.
