Quinoa Side Dish
Loved it! I doubled the recipe. I was out of garlic and broth, so I added 1 Tbs. pesto and 2 tsp. chicken seasoning for flavor. Also used added finely chopped celery and carrot with other vegetables. Stirred in a little parmesan.

Hot and Sour Tofu Soup (Suan La Dofu Tang)
This was great and Hubby loves it too! I had to substitute due to lack of a few ingredients on hand. I used 6 cups water and 1 individual miso cup pack instead of veg broth; small onion thinly sliced (no green ones at home); about 8 shitake mushrooms; plus 1/2 thinly sliced carrot. I forgot to add the egg. Since I upped the liquid, I used 2 Tb rice vinegar and 4 Tb tamari soy sauce. I also threw in a handful of sliced water chestnuts that I had left over from another recipe. It turned out great! Thanks for the recipe : )

Lower Fat Banana Bread II
This was great w/ the addition of suggestions from other users. I used 3 bananas, split the sugar to half brown-half white, added handful of chocolate chips, 1 Tbs honey, and 1/2 tsp each cinnamon, cloves, nutmeg, and allspice. Mine baked for 75 minutes and turned out perfect. I agree that the bread is much better after it cools overnight. Husband and kids all loved it too. We will make this again!! Thanks for the recipe and all others for their suggestions!!
