Oatmeal and Wheat Flour Blueberry Pancakes

Great pancakes. As others did, I used applesauce instead of oil and only used 2 eggs. Added 1 tsp of vanilla. Will definitely make again.

Creamy Spinach Soup

Added about 1-3/4 cup of sharp cheddar cheese and 8 oz. lite cream cheese - fantastic! Also made with 32 oz. of broccoli instead of spinach. While cooking, I took out a couple of cups of soup and puréed in blender then added back to soup.

Scalloped Corn

Hearty Ham Casserole

Very good. I wanted to put this together quickly so added tator tots instead of potatoes. Also added a little more milk since I used the tator tots. I also used steamed green beans instead of corn since I didn't have corn. Next time, I may use frozen hash browns instead.

Pumpkin Cookies I

Great cookies! I try to make the recipe as low fat as I can. I used 1/2 c of applesauce instead of oil, 1 cup of butterscotch chips, one small can of pumpkin and 2 tsp. of cinnamon - these are very good and I will make again!

Chunky Potato Soup

Best Cream Of Broccoli Soup

Used a bag of frozen broccoli and frozen bag of asparagus stir fry. Also added a tsp of parsley. Added a 1/2 of 4 blend cheese at the end of cooking. Very delicious and will make again.

Egg Casserole

Great recipe. I added 16 eggs as suggested and used a lb. of bacon. I also added 3 green onions as mentioned too and it was great. Cooked 15 minutes covered and about 15 minutes uncovered.

Chicken Salad

Great receipe. I had left over grilled lemon chicken (recipe on this site) that I used. I skipped the bacon and added a can of mandarin oranges and chopped walnuts. I also didn't have any water chestnuts so didn't use them either. I also used helman's light mayo. I will try the bacon next time but didn't have time to cook the bacon this time.

Great bread! I only used 3 cups of sugar & also used applesauce instead of oil and whole wheat flour instead of white flour..of course added 1 1/2 cups of chopped walnuts and it was delicious!

Chicken Tetrazzini IV

Great recipe. To make it healthier, I used 1/4 c olive oil and sauteed the mushrooms and garlic in oil and then added whole wheat flour. Used 1% milk instead of 1/2 & 1/2 and used 1/2 whole wheat spaghetti and 1/2 regular pasta. Also used an extra cup of broth (doubled the recipe).

Salsa Chicken Rice Casserole

Okay, I modified this a lot to reduce fat. I rubbed the chicken breast with olive oil, salt, pepper, garlic powder and basil and then baked for 1 hour at 350. I also used brown rice and added 1 tsp of chicken boullion in the water while it was simmering. For the sauce, I used a can of 95% fat free cream of celery soup and 1 cup of boiling water with 1 tsp of chicken bouillon, chopped onion and 1 1/2 cup of green salsa since I was out of red salsa. I mixed the rice, sauce, chicken and 2 cups of 2% mild cheddar cheese together and baked. It was very good. Try it with crushed tortilla chips for a different taste.

Will definitely make again. To make healthier, used 1/2 c whole wheat flour instead of white flour and used 4 T of butter. Also used 1% milk instead of cream and the soup was still thick so added 1 more cup of water the 2nd time I made it. To help with a little flair added cooking sherry, sauteed onions, garlic and shredded carrots. Family of 5 loved it and it was all gone in one dinner.

Breakfast Casserole I

I would prefer this without the bread and maybe used croissant dough instead. Used turkey sausage instead of bacon and added green peppers and onion. More cheese will be added next time.

Simple Artichoke Dip

Very good. I used Hellman's light mayo and thought it came out tasty. I also added 1/2 tsp garlic powder and 1/2 T of lemon juice and worcestershire sauce based on another review. Also used the shredded parmesean cheese.
