Homemade Granola

Fantastic! I used cranberries & pecans instead of raisins and almonds. Also added in 1/2 cup of sunflower seeds and 1/2 cup cashew pieces. I only had to bake for 45 minutes. Will definitely make this again.

Grandmother's Buttermilk Cornbread

To make diet-friendly, I did the following: used 1/4 c. applesauce and 1/4 c canola oil. Used white whole wheat flour and added 1 T baking powder. Will definitely keep as my go-to cornbread recipe. Also, I have made with oatmeal flour instead of cornmeal. I just put old fashioned oatmeal in the blender and pulsed it to flour and added 1 teaspoon of cinnamon too.

Cherry Chicken Pasta Salad

Very good recipe - will definitely make again. Used what I had on hand and needed to use up; added 1 yellow pepper and a small red onion. Didn't have almonds so used pecans. Used 3 T red wine vinegar instead of the 2 T water & 1 T. champagne vinegar. Didn't have poppy seed as well. Will make again.

Sophie's Zucchini Bread

Wonderful recipe. Used 4 cups of zucchini; 1 tsp of baking powder and used 1 cup of white sugar and 1 cup of brown sugar. Also used pecans instead of walnut.

Sweet Corn Bread

Good cornbread. I tried to lighten it by using 1/2 c wheat flour; 1/2 c white flour; light sour cream and used canola oil instead of butter. Very good but I think I would increase the sugar to 1 c or use brown sugar instead to sweeten it up. Will definitely make again.

Very good! I didn't have turkey but 2 lbs. ground chicken and used 1/2 c. apricot preserves and 1/4 c. orange marmalade and changed the servings to 12 servings.

Classic Macaroni and Cheese

This was amazing! I will definitely make again. I reduced down to 350 and only heated for 35 minutes. I took it out a couple of times and stirred and then put back in the oven. Definitely a keeper.

Pumpkin Chocolate Chip Muffins

Great! I used 1 c of white flour and 1/2 c of wheat. Also took the advice of another and doubled the nutmeg and cinnamon. Used brown sugar instead of white sugar. I had some chopped pecans left over so threw those in too; about 1/4 c. I also used mini chocolote chips. I had some left over streussel topping from another batch of muffins so put that on top before baking. This consisted of 3/4 c sugar, 1/2 flour, 1/4 c margarine and 2 tsp of cinnamon; mix all with a fork and then spoon on muffins with a tablespoon...you will have quite a bit of topping left over or could use for 2 batches. Will definitely make again.

White Chili with Ground Turkey

Excellent. Didn't have ground turkey so used 2 lbs. ground chicken. I didn't have green chile peppers so used chipotle seasoning. I used 4 cans of beans and mashed them a bit before I put into the soup. Only used 3 cups of chicken broth as others suggested. Will definitely make again.

Spinach and Tortellini Salad

Wonderful! Used fresh spinach and roma tomatoes and added a little red onion. Used Honey Garlic Vinaigrette salad dressing from this site. Will definitely make again.

A Twist on Pasta Salad

Excellent salad. Took the advice of another reader; used cucumbers, roasted red peppers, grape tomatoes but added black olives. Used feta cheese instead of parmesan and olive oil instead of canola. I used a whole box of rotini pasta so I doubled the sauce. Definitely will make it again.

Great recipe. Always try creating a low fat dessert. Used 1-1/2 c white flour and 1/2 c whole wheat flour; 1-1/2 c white sugar & 1/2 c brown sugar; no oil but 1 c applesauce; 3 whole eggs and 2 egg whites. Added 1 more teaspoon of cinnamon; 1/2 t. nutmeg; 1 cup drained pineapple and 1/2 c raisins. Did not frost and wonderful!

Salmon Patties I

Fantastic! Modified as some have said by adding 1 t. dijon mustard; 1/2 t. lemon peel; 1/2 t. pepper; 2 T soucr cream; 2 T light mayo; and a dash of hot sauce. Added milk to moisten. The kids loved it! I used left over salmon instead of canned.
