White Chili with Ground Turkey

Excellent. Didn't have ground turkey so used 2 lbs. ground chicken. I didn't have green chile peppers so used chipotle seasoning. I used 4 cans of beans and mashed them a bit before I put into the soup. Only used 3 cups of chicken broth as others suggested. Will definitely make again.

Spinach and Tortellini Salad

Wonderful! Used fresh spinach and roma tomatoes and added a little red onion. Used Honey Garlic Vinaigrette salad dressing from this site. Will definitely make again.

A Twist on Pasta Salad

Excellent salad. Took the advice of another reader; used cucumbers, roasted red peppers, grape tomatoes but added black olives. Used feta cheese instead of parmesan and olive oil instead of canola. I used a whole box of rotini pasta so I doubled the sauce. Definitely will make it again.

Carrot Cake III

Great recipe. Always try creating a low fat dessert. Used 1-1/2 c white flour and 1/2 c whole wheat flour; 1-1/2 c white sugar & 1/2 c brown sugar; no oil but 1 c applesauce; 3 whole eggs and 2 egg whites. Added 1 more teaspoon of cinnamon; 1/2 t. nutmeg; 1 cup drained pineapple and 1/2 c raisins. Did not frost and wonderful!

Salmon Patties I

Fantastic! Modified as some have said by adding 1 t. dijon mustard; 1/2 t. lemon peel; 1/2 t. pepper; 2 T soucr cream; 2 T light mayo; and a dash of hot sauce. Added milk to moisten. The kids loved it! I used left over salmon instead of canned.

Blueberry Zucchini Bread

Excellent! To make the recipe more low fat, I used 3/4 cup applesauce and 1/4 cup olive oil. Used 1/2 white flour and 1/2 wheat flour. I also only used 1/2 cup brown sugar and 1/2 cup white sugar. Used a crumble topping on top with 3/4 cup sugar, 1/4 cup flour, 1 T. cinnamon and 1/4 cup margarine. Cooked in 2 loaf pans for 1 hour and 15 minutes. If using frozen blueberries, I used 2 cups and let them thaw while putting the rest of the ingredients together. Will definitely make again and again!

Excellent! I took the advice of others and cooked 6 minutes per pound at 500 degrees since I had a 7 lb. roast. I also rubbed the roast with 1 tsp of each: salt, pepper, garlic powder & onion powder. Will definitely make again.

New England Clam Chowder I

This was amazing! When I cooked the onions, I added 3 T butter and 3T flour to make a roux. Added the water and 1% milk into the potatoes on low temp. I also used turkey bacon and at the end I added thinly shredded carrots for color. Will definitely make again!

Easy Beef Stroganoff

Excellent. Based on reviews, I sauted a sliced onion and 8 oz. of sliced mushrooms in salt, pepper, garlic powder & 1 tablespoon of olive oil and removed from pan. In the same pan, I then brown 2 pounds of ground turkey seasoned with salt, pepper and arlic powder and add 1 can of beef broth. In a separate bowl, I mix 1 cup of fat free sour cream with 3 tablespoons of flour with salt and pepper to taste, then add to the meat mixture and let simmer until flavors have blended.
