Banana Chocolate Chip Bread

Used 1/2 white and 1/2 whole wheat. Used applesauce instead of oil. Added 2 tsp of vanilla. Also used 60% cocoa chips. Very good bread!

Seared Ahi Tuna Steaks

Chicken and Corn Chili

Cooked on stove. Boiled 6 chicken thighs in 3 cups of water and the spices. After about 20 minutes, added the jar of salsa, 2 cans of black beans, 1 can of white kidney beans, the corn and 7 oz diced chilis. After about 15 minutes more, took the chicken out and shredded and then put back in. Pretty awesome!

Orange Buttermilk Salad

Instead of pineapple, used a 15 ounce can of undrained mandarin oranges. Used lite whipped cream and it set very well. Will definitely make again.

Chicken Enchilada Soup III

Fantastic. I didn't brown my chicken (used thighs) just boiled it and then used the broth for the soup. Added onions and garlic to the broth. While simmering, I added 2 cans of drained black beans and one can of fiest corn. It was fantastic and will make again!

Zucchini Cake I

Used 1/2 white whole wheat and 1/2 white flour. Used 4 cups zucchini. Used 2 cups brown sugar and only 1 cup of oil. I added 1/2 cup chopped walnuts. With the advice of another, instead of the cream cheese frosting, I glazed it when still warm with a simple glaze (1 cup powdered sugar, 1 teaspoon cinnamon, 2 tablespoons milk, and 2 teaspoons vanilla). I made it in a 9x13 pan instead of layers and baked for about 50 minutes. Wonderful!

Stuffed Green Peppers I

Great. Followed suggestions and used chopped tomatoes with garlic and basil; added basil, oregano and italian season. Made the tomato sauce with 1 can of soup and 1/2 can of water and just poured into the mixture before putting in peppers. Will make again!

Banana Crumb Muffins

Fantastic. Based on the following reviews, aI did the following: Used 1/2 c whole wheat flour and 1 c white flour; used canola oil instead of butter; used 1/2 c white sugar and 1/4 c brown sugar; added 1 tsp vanilla; 1/4 t nutmeg and 3/4 t cinnamon. Also added 1/4 c chopped pecans and 1/4 c chopped walnuts. Increased the cinnamon for the topping to 3/4 t. Very very moist!

Basic Chicken Salad

Fantastic. Adjusted all ingredients based on 3 cups of chicken. Also added drained 15 oz. of mandarin oranges; 1/4 tsp each of onion powder, garlic powder, salt and pepper. Also used light mayonnaise.
