Pumpkin Roll I

Surprisingly easy, and turned out great the first time. ( I made a practice roll before I made one for the bunco girls.) I lined the pan with Reynolds non-stick aluminum foil...no sticking, just like they advertise.

Black Bean Hummus

This is a great black bean dip. I say bean dip because I don't consider this hummus. To me hummus = specifically, garbanzo beans.

Strawberry Cobbler II

This recipe is "almost the reincarnation" of my Georgia grandmother's strawberry cobbler recipe. She has been gone for almost 30 years and took the secrets of her southern cooking to the grave with her. She never measured anything, and even with my aunts watching over her shoulder, they could not "get it" to pass it along to us. My 77 year old father nearly became misty-eyed when he ate it. Thank's for the memories!

Taco Pie

Got this recipe from my sister-in-law several years ago. However, I have adapted it to my "Pampered Chef" pizza stone. On a large pizza stone use two cans crescent rolls and shape into crust with a lip on the edge so ingredients will not run over. Same great taste with a different presentation!

Spicy Bean Salsa

I made this for a New Year's Day party so we could all eat our black-eyed peas for health?, wealth?. Anyway, this stuff is addicting. I could not stop eating it. 10 stars from me, and maybe my family will stay healthy and get wealthy this year!

Very tasty. 5 stars. My family enjoyed Aussie Chicken, and I will definitely keep this recipe. However, I probably won't make it very often because of the high fat content.

Slow Cooker Chicken and Dumplings

It is sixteen degrees outside, so it was a perfect day to try this recipe. Delicious!! I have tried to make chicken and dumplings a few times before and had disasterous outcomes. This recipe is too simple to be so good! I used about 2 1/2 to cups of left-over chunky-diced chicken and Grands biscuits, which I too, added about an hour before serving time. I also turned up the slow cooker to high when I added the biscuit dough...don't know if that mattered or not. My 13 year old daughter says this recipe "tastes just like Grandma's," which is a compliment because my mother-in-law is an excellent cook.

The Best Rolled Sugar Cookies

This recipe is not the greatest (to me), but it was good. For people making this cookie and saying it is too sticky...the secret is refrigeration. Chill the dough. Then divide into 3 or so balls. Roll each ball between two sheets of wax paper to desired thickness, then place in freezer. After 20-30 minutes dough will be sufficiently frozen. Remove one batch at a time. Gently peel back wax paper, first on one side--and gently replace. Then flip over and peel away wax paper. Immediately cut designs and place cookies on PARCHMENT PAPER that has been placed on your cookie sheet. That way--no sticking!! Bake until desired doneness. Let rest on the parchment paper for a few minutes then remove and cool completely before icing. I had beautiful professional looking cookies upon completion...and I don't bake much.

Excellent icing. I too added more milk and corn syrup to get it to spreading consistency, about 1-2 tsp. each. Love the shiny hard finish!

Rich and Creamy Tomato Basil Soup

WOW! Incredible. Devine. Decadent, calorically speaking. Very easy to make. I used canned whole tomatoes, since it is January and there are no good fresh tomatoes around here this time of year, and the soup was still fabulous. Will I make this again? Probably not because of the 45.6 fat grams per serving,(and I had at least two servings), but it sure was good!

Easy Tortilla Soup

5 stars for easy preparation. It tasted great, but was a little too tomato-ey for me, and also way too salty, hence the overall 4 star rating. Hey, what can I say, a recipe doesn't get any easier than that!
