These enchiladas are AWESOME! Of course, you can make your own changes/additions, but it's a great base. I love the sour cream used as well...however I do use light sour cream. I followed the recommendation to omit the water, tomato sauce, and the taco sauce. I sauteed onions, jalapenos, garlic adn green peppers...I then added the cooked chicken, a small jar of enchilada sauce, chili powder, oregano, parsley, salt and pepper and heated it up. I layered white corn tortillas in a baking dish after I had dipped them in water and I made more of a casserole type dish. IT WAS AMAZING! Next time I'll add even more spice to it, but it was sooo good. Can't wait to have it for lunch today.
