Triangular Delights

Great! I had package of whole wheat tortillas in the freezer for over a year and finally found a use for them!! I used white truffle oil and did add a little salt to the spice mixture! Went fabulously with my homemade chicken soup! Thanks!

The Best Meatballs You'll Ever Have

The name is true! I used ground bison instead of ground beef. We had these plain on hamburger buns. My husband loved them and said they reminded him of the White Castle hambugers he used to have in college! Will use this recipe again!

Apple Maple Crumble Pie

Good basic recipe. Not too sweet. Mine ended up with a lot of liquid - instead of being thick and gooey - which is the way I like a crumble. This has such a very nice taste - will use this recipe again.

Hearty Breakfast Cookies

Great and filling breakfast cookie! I did use buttermilk instead of the water. I also used half raisins and half chopped dates. Because of what I had in my pantry - I used half peanut butter and half sunflower seed butter. I also ran out of oatmeal and only used 3 cups. Both not by choice....but the cookies came out great anyway!!!!! Thanks a bunch!!! I look forward to also crumbling a couple of these cookies in a bowl of vanilla yogurt, as well!!!

Jumbo Breakfast Cookies

Fantastic - Yummy-licous!!! I would never change the Cheerios for Rice Krispies - I would however, use Banana Nut Cheerios next time! I made only two changes: I used Buttermilk INSTEAD of the water & I added 1/2 cup chopped dates IN ADDITION to the raisins - came out perfectly!!! Thanks a bunch!!!!!!!

Creamy Vanilla Pudding

Excellent! I craved some warm pudding on a snowy afternoon while watching old movies - and this was a snap to make! I served in oversize coffee mugs with a sprinkle of fresh grated nutmeg!! Would be great served chilled the next day too! Although - I will cook it much longer next time - for I am in the very rare group that likes lumpy pudding!!! Thanks a bunch!

Uncle Josh's Famous Chicken and Rice

Please don’t pay attention to the negative reviews here! This recipe is a real gem for a quick and easy and DELICIOUS dinner! Great with dilled peas and buttered soft French bread!! Along with the water - I used one can of Amy’s Organic Cream of Mushroom soup, 1 heaping tablespoon of Sylvia’s Lemon Pepper seasoning, a heaping ½ tsp of cumin, fresh (not dried) thyme, ½ tsp salt, ½ tsp dried lemon peel, and the juice of ½ small lemon (last three my additions). The beauty in a recipe that most of the ingredients are “to taste” means that if it is bland – then it is the fault of the cook, NOT of the recipe’s author!!! The only suggestion I have for the author is to have listed salt to taste – because a lot of new cooks wouldn’t know to do that “to taste” - even if it’s not listed. I mixed the above with my already cooked/diced chicken and just-cooked jasmine rice. I cooked for a shorter time, since my chicken was cooked already. This was absolutely delicious and I will fix it again and again!!! Thanks a bunch “Uncle Josh”!!!

Roast Leg of Lamb

This was easy and came out absolutely perfect! I put in a large roasting pan and added water before and halfway through cooking to keep the moisture level up in the oven. Will use this again - would make a wonderful and different Christmas or Easter dinner main course!

Pumpkin Fudge

If I make this again - I agree with the reviewer that is the "fudge queen" and will put the marshmallow creme in when I remove it from the heat. Not an extremely strong pumpkin flavor...so don't be expecting that.

White Bean Chicken Chili

I used this recipe as a starting place! I added a bottle of beer after cooking the onions and garlic and brought to a boil before proceeding with the recipe. I also added more spices to suit our tastes (more salt / more heat). When I was all done - I added a leftover bowl of cooked white rice that I had. Doing that made enough to last a long time - some will be going in the freezer! Adding the rice really stretches how far the food will go!! Thanks!

Pretty good - not a very sweet cookie - which I think is a good thing. They are really good with hot tea. I used Smucker's Natural peanut butter. I will fix again.

Absolute Best Pancake Syrup

I have such a mixed opinion on this one. I agree with everyone else about the wonderful flavor. I also agree about using a pot twice as big as needed because of the foaming after you add the b.soda. The foam took about 30 minutes to go away after the syrup was done. However - despite the great flavor - I could taste a slightly "carbonated" aftertaste of the baking soda. I had to refrigerate this syrup and wait until the next morning to reheat it in the microwave - then this baking soda taste was gone. I would recommend preparing this the day before you have guests over. Otherwise it does have the flavor everyone else says it does!

Buttermilk Corn Bread

FABULOUS! I will use this for ALL my cornbread needs! This time - I used 1/3 cup sugar instead of the salt. I also doubled the recipe and used a glass 9x15 pan. I also used white cornmeal. But - the possibilities are endless - next time maybe some crumbled bacon - the next - maybe tiny snippets of dried apple? This was SOOOO quick and easy!! Tonight - the butter, honey, and huckleberry jam will be on the table!!!!!

French Salad Dressing

Great! I scaled down to 6 servings and used as a dressing for a wonderful grape tomato and basil salad. The only changes/substitions I made were: olive oil, hot paprika, and red wine vinegar. Will use again!

Baked Pancake Squares

Great recipe - I took the suggestions of other reviewers and did the following: doubled the recipe; put pecans, 1 stick of melted butter, and 1 cup brown sugar in the bottom of a 9x13 pan before pouring the batter in. In the batter, I used 2 large eggs and didn't double the baking powder. Just before putting in the oven - I sprinkled the batter with cinnamon. It came out perfect - inverted the pan on a platter and served with the pecan side up. Made it extra rich by serving with a combo of melted butter and syrup, with a side of bacon. Was a real treat - like a dessert - cross between a sticky bun and pancake! DH loved it!!

Spicy Peach Chicken

After using up some very expensive ingredients - I just couldn't juse this sauce. I think the Cajun seasoning should have been a teaspoon - not two tablespoons! Sorry - I rarely give under 4 stars - but this one caused me to waste a lot of money! Beware!

MMMMM... Brownies

All I can say is "WOW". I doubled the recipe and baked in a 10x12 pan for 28 minutes. I used unsalted butter and just used a pinch of salt (don't like to taste any salt!). Also - I love chocolate and rasberry together - so I added a tiny bit of rasberry extract - and wow - added just the taste I was looking for! Thanks a bunch!!!!

Seasoned Short Ribs

This was a very good recipe - easy to do. I gave it 5 stars for this reason. However, it taught me one thing personally - I don't like beef short ribs. They are a little gamey tasting and very fatty. Maybe I'll try this recipe with pork country ribs next time.
