I put my cooking level as "intermediate" because I only consider people like Emeril Lagasse, Michael Chiarello, Mario Batali, and John Besh to be "experts"!!!
My favorite things to cook
Everything - especially on a cold, rainy, and/or winter's day!!! Also - love to cook and have a great dinner ready for when my husband gets home from work!!
My favorite family cooking traditions
Christmas Cookies at Christmas and Pumpkin cookies and roasted pumpkin seeds in the Fall! And - of course - my husband's fabulous apple pie!!

Turkey Tetrazzini II
After reading that some cooks thought this was a little bland - I used buttermilk instead of regular milk - adds the zing that is missing for some! Also - when you put the pasta and turkey in the baking dish - add extras - like peas, pimentos (for a little color!), and mushrooms. If you used canned mushrooms - remember to add the liquid to the buttermilk mixture before cooking! Also - I use Wondra instead of plain flour and mini fuslli instead of spaghetti.

Five Ingredient Ice Cream
Very quick and easy. I took another reviewer's advice and added peppermint extract, green food coloring, and mini chocolate chips to make a mint-chip flavor. I HAVLED the peppermint extract to 1/2 tsp. - and it was still a strange taste. I will make this again with this variation - but will use pure MINT extract next time. The peppermint would have been good - but with red food coloring and crushed peppermint! I served the mint variation I made on top of warm brownies....but would have been much better with MINT extract. Thanks for the base idea!!!! Will use when I need a special topping for those special desserts - as well as a true peppermint variety around Christmastime!

Dad's Escarole and Bean Soup
I put everything in my crockpot! I used a carton of vegetable broth and added 2 cups of water. I used three different types of canned beans and added a tabelspoon of dried dill to make it interesting. I did have to add a good amount of salt - since everything I used was no salt added! The only part I cooked on the stove - was I sauteed 2 red onions and 2 medium hot peppers in grapeseed oil, butter, salt, and 2 tablespoons of sugar to almost caramelize them - then added them to the crockpot. Cooked on low for 5 hours - WONDERFUL - the slight warmth from the peppers was perfect for this 23 degree night we are supposed to have! Thanks! Will use again and again - the crockpot - made this soooo easy!!!!!
