Baked Kale Chips

Cream Cheesy Cubed Zucchini with Lemon and Oregano

This was yummy! Next time, I would halve the amount of olive oil - this was just dripping in extra oil. Great topped with some Parmesan cheese.

Baba Ghanoush

I must have done something wrong because this was so sour and bitter that I just ended up throwing it away. Word of caution, add the lemon juice a little at a time until you've got it how you want it. I guess my eggplant was a little on the small side, as there was WAY too much lemon juice, even though I followed the recipe to a T.

Sean's Falafel and Cucumber Sauce

This was seasoned absolutely perfectly. I, like others, baked mine. I only had dried herbs, but these still tasted amazing, especially with the tzatziki! Keeper for sure!

Scrambled Egg Muffins

These were good and work really well if you don't have time to cook breakfast. If ANY egg mixture gets onto your baking pan, clean it BEFORE you put it in the oven - once that stuff bakes on, it's baked on for good (had to throw mine away).

Bean Soup With Kale

I really liked this. I used baby kale from the farmer's market, so there was no problem with the big vein running down the middle of the leaf. Great flavor, spices were just right, didn't even have to add extra salt. Tomatoes do get a little mushy, so if you like firmer tomatoes, don't add them until the end.

Nana's Southern Pickled Peaches

These are fantastic! I've never had pickled peaches before, but they are amazing. It's like peach cobbler just without with cobbler. I don't like a strong clove flavor, so I just boiled the cloves with the pickling juice instead of putting one in each peach. Amazing.

I thought this was great. The only change I made was in adding 1 oz of butter spray in addition to the milk. It really did taste like mashed potatoes!
