Black Bean and Corn Quesadillas
These were simple and delicious. I did everything exactly as the recipe states, except I added a 4 ounce can of spicy diced green chiles and did 1/2 sharp cheddar cheese and 1/2 pepper jack cheese. I was a little apprehensive about flipping a whole quesadilla, so I folded it in half, which made turning it over much easier. My husband, a meat and potatoes kind of guy, loved these and requested I make them again.

Delicious Ham and Potato Soup
I was looking for a soup recipe that called for ham, as I had cubed my leftover Christmas ham, and had plenty. I made a few changes: I added some diced carrots along with the potatoes, celery and onion. I also put the chicken bouillon in the water along with the vegetables instead of adding it at the end to give the vegetables some flavor. I used half and half instead of milk to give the soup some richness, and added a teaspoon of Italian herbs, which was a good decision. This soup was chunky and delicious! A keeper.

Simple Garlic Shrimp
This was delicious. I cooked the shrimp in the olive oil but removed it after it was cooked, as I didn't want to over-cook it and eat tough shrimp. Since my family loves garlic, I used 8 cloves of garlic. I didn't have capers so I used green olive brine, which was still OK in the recipe. I mixed some white wine, a bit of sour cream, and Parmesan cheese into the butter sauce. I mixed the shrimp and al dente bow tie pasta into the sauce. Yummy!
