Blueberry Zucchini Bread

This was amazing!! I followed some others' advice and added half oil and half applesauce and decreased the sugar just a tad. Someone else also recommended putting a little dusting of spices and sugar on the bottom of the pan, and I also did that, which seemed to add a nice touch. This is the most delicious bread ever!! I'm giving a couple of loaves to my kids' teachers, too...it's too good not to share! :)

Spinach Mushroom Quiche

This was a great recipe. I did alter some things after reading other reviews. I didn't use the crescent roll crust based on what other people said. I used a ready-made frozen crust and it was delicious. I couldn't find the lemon soup either, so I just used a garlic basil veggie seasoning packet (but only used half of it) and it was great. I also added a can of chopped artichokes. I loved the flavor it added, but I think it also added extra water, so I had to cook it for an extra half hour so it wasn't so runny. I used milk instead of half/half and sharp cheddar instead of monterey jack. I also added a few red pepper flakes for some zing! My husband, who is very picky, raved about it!

Broccoli and Tortellini Salad

This recipe was so easy and so tasty! I followed other people's advice and reduced the sugar in the dressing to a 1/4 of a cup and I thought it was perfect. I think it would've been too sweet otherwise. I also only added half a red onion instead of a whole one--but that's just because I thought too much raw red onion would be overpowering. And I also blanched the broccoli for 30 seconds with the pasta, which made it a nice bright green while still keeping the crunch. Yummy!

Vegetable Shepherd's Pie

This was an excellent, flavorful vegetarian meal! I have struggled to find good, tasty meals for my vegetarian husband, but he absolutely loved this! As was mentioned before, 8 potatoes was too many--I ended up having leftovers that I didn't use on the casserole (5 is probably a good amount). Also, someone else had mentioned it was bland, so I bought flavored tomotoes and tomato sauce (with garlic, oregano and basil), which I think helped add some flavor. I will definitely be making this again!
