Macaron (French Macaroon)

It worked for me!!! I weighed my ingredients,added cream of tartar to my egg whites while betting them and after piping the batter onto the cookie sheets lined with parchment paper I gave the cookie sheet a good hits against the table (this is supposed to get the bubbles out and prevent cracking. I filled mine with Nutella yum yum :) I have never actually tasted a macaron before I took on the challenge of making them. And after creating the perfect macaroon I know what all the fuss is about. THEY ARE AMAZING!!!

Mimi's Zucchini Pie

This was OK (made as written). I did not like that it was very bred-like. I wanted it to be more eggy. Next time I will tweak it by adding an extra layer of tomatoes and cheese in the middle (that was my favorite part of this dish) I think this will be better if the baking mix was cut by half and a splash of milk/cream would not hurt. Also but some more seasoning in it (HOWEVER kids love it AS IS with no heavy seasoning). I like that I found this recipe it's something NEW and I love trying new things. Just tweak it to YOUR liking.

Blueberry Monkey Bread

This was the first monkey bread I ever made and it was GOOD!!!. I only used one 16 oz. can of biscuit dough to make half the recipe. I also put some cream cheese inside every piece of bread. My hubby who usually doesn't eat what I make had two pieces!!!

Chef John's Pineapple Upside-Down Cake

AMAZING !!! The batter was a little thick so I added a jar of baby applesauce (that's what I had on hand)and a 1/4 cup of pineapple juice. I did not have rum so I substituted Rum flavor instead. For more flavor I added 2 tsp. cinnamon a dash of nutmeg and allspice (this added lots of FLAVOR which I love) This is so SIMPLE and SO easy. I would recommend making this. Those who had problems with this recipe I suggest making a couple adjustments and trying again. That is what cooking is all about.

My Best Clam Chowder

I made this today it was really good. Probably didnt even need the suggested heavy cream. Next time I will try making it lighter. I think it will still turn out great.

Best Carrot Cake Ever

This is the FIRST cake I ever made. I followed the recommendations of the fist two reviews and it turned out AMAZING =) I used 1/2 tsp baking POWDER and used a cheesecloth to strain the carrots BEFORE I put brown sugar in and I strained the pineapple. BEST CAKE EVER REALLY =)

Panang Curry with Chicken

I loved this recipe!! I doubled the recipe to feed 3 hungry teenagers and have some leftovers. Everyone had seconds!!! I think the recipe calls for too much coconut milk. When I doubled the recipe it called for 8 cups of coconut milk I put in 7 cups and the dish was still a little to saucy. I also put half a red and green peppers, a half can of bamboo shoots (love those). In the dish would not have suffered from even more veggies. My advice put whatever veggies you like into the dish and you will love the end result. Please enjoy this is an easy and delicious recipe.

Easy Borscht

I added some fresh thinly sliced cabbage towards the end of the cooking process or if you are adventurous add sauerkraut it gives it a lot of good flavor. Additionally there is no need to cook in 2 separate pots. I just cooked the meat first (strain the water, skim the fat) then add the potatoes and rest of the veggies. I only used 3 medium potatoes. For additional flavor I added beef base (i use organic). You HAVE to eat borsh with sour cream, it brings out the flavor. I grew up eating borsh and now I make it at least once a month.
