Quick and Easy Vegetable Soup

I really liked this vegetable soup! As a New Orleanian, I use Tony Chacere's creole seasoning on everything! That really helped to bring out the flavor in this soup. I will slightly modify this recipe next time. I will use more chicken broth because I found a lot of it evaporated when I simmered the soup. I will simmer the soup for at least an hour so that the celery softens more. I live on my own so I am constantly looking for recipes that are both healthy and economical. This soup costs about $10 to make and it lasted 3 days for me! This vegetable soup was healthy, economical, and delicious, easily making this recipe 5 stars!

Chicken Marsala

I made this one evening for my boyfriend and he was incredibly impressed! We both work full-time, so I really liked how quick, easy, and delicious this recipe is! The chicken was so tender and the sauce was amazing! I doubled the marsala and sherry and I doubled the mushrooms. I also added some half and half to make the sauce thicker and creamier. I was so impressed with how sophisticated this recipe tastes! I will definitely cook this for company one day.

Eggplant Parmesan

I thought this recipe was delicious! I did make a few small modifications. I used 3 cloves of garlic in the olive oil. I salted and peppered both sides of the eggplant slices before baking them. That really brought out the flavor of the eggplant. I also used some fresh oregano when I assembled the eggplant parm. I live on my own and I found this recipe to be very economical. I ate it for dinner for 2 nights. This dish reheated nicely the second day. Healthy, delicious, and economical gives this dish 5 stars!

Baked Potato Soup

This soup was delicious! I did not have time to bake the potatoes beforehand, so I boiled them after dicing them. I kept the skin on the potatoes. I crumbled the bacon into the soup when I added the cream. This soup does take a little while to thicken, so be patient. Being the New Orleanian I am, I had to add a little more hot sauce. I used Louisiana Hot Sauce. This soup cost me about $15 to make. Very simple to follow, delicious, and economical gives this recipe 5 stars!

Zucchini Patties

These were easy and delicious! I used one whole zucchini (about 2 1/2 cups of grated zucchini), but I kept all of the other ingredient measurements the same. I produced 5-6 patties that came out perfectly! I served them with sour cream and marinara sauce. I will certainly make these again!

Portobello Sandwiches

This was a delicious recipe! I did not add lettuce and tomato to the top of the portobello and I modified the mayonnaise mixture. I made a bruschetta mixture and added some chopped onion. I drained the olive oil and balsamic vinegar that I used in the bruschetta mixture and added this mixture to the mayo and capers. I used very little mayonnaise. I found this concoction really brought this recipe to the next level. I also used Kaiser rolls instead of hamburger rolls. This recipe far exceeded my expectations! I will definitely make this again!

Ratatouille

I am on a health kick and this recipe really proved not only healthy, but delicious! To avoid mushy eggplant, I wouldn't saute the eggplant for 10 minutes. I would recommend cooking the eggplant for about 7 minutes. The eggplant will soften more in the oven while baking. I did have to use quite a bit of salt, but it came out perfectly. This recipe was economical, healthy, and delicious, easily giving this recipe 5 stars!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Better than the store-bought! Not as great as some restaurants, but still pretty good for homemade! My boyfriend was very impressed with how it tasted. It was very quick and easy to make. I tripled all of the ingredients because I needed enough for 2 iceberg lettuce wedge salads. I added white wine vinegar to taste, because I wanted to avoid having a bitter flavor. This was very good and I would recommend anyone to try it!

Stuffed Tomato Basil Chicken

I had to make several modifications because when I made this recipe as written, I had a gallbladder attack! I was rushed to the ER and had my gallbladder removed. When I told the doc what I ate, he facepalmed. Despite my ordeal, I continue to make this recipe. I do not include the bacon or the sprinkle of parmesan at the end. I also make my own marinade. The recipe is great without the provolone too! For me, a marinade, tomatoes, chicken, and basil will suffice. Depending on what you put in the marinade, the way I make is Paleo-friendly.
