Healthier Oven Roasted Potatoes

I made this as a dinner side dish with white potatoes that were on hand and it was great! I also made them and then mixed them in scrambled eggs for a fantastic breakfast. My family didn't even put ketchup on the eggs and potatoes. They kept begging me to make them again.

Coconut Pancake Syrup

I have been searching for a recipe to match the coconut syrup at my favorite restaurant in Kauai where they make tropical pancakes and this is it. Adding some vanilla gives it a more robust flavor. I serve this over pancakes that have shredded coconut and macadamia nuts added to the batter. Then put sliced bananas over the pancakes, pour syrup on top, and top with whipped cream. I double the recipe because they are all gone in a flash.

Ruth's Red Lentil and Potato Soup

Wow, this is a great soup! I checked on the lentils and it was ready in 25 minutes. The only changes I made were adding cubed ham and using 4 cups of kale instead 1 to make it heartier. I think increasing the cumin would give it more flavor, but it is great just the way it is or as a base to add more vegetables.

Grandma's Peach French Toast

Absolutely fantastic! I made mine with Hawaiian Sweetbread, and used the suggestions from other users to add 3 tablespoons of peach brandy to the sugar mixture and sprinkled pecan halves on top. I also increased the recipe to 7 eggs

Stuffed Pattypan Squash

I just made this for dinner and it is fabulous. It was a hit with my family. I added fresh oregano, basil and garlic for a more Italian taste and served it with spaghetti sauce with sausage. Yummy! I also used the stuffing for zucchini and yellow crookneck squash and they turned out great.

Zucchini Cobbler

This was amazing! My family wanted to know how it got it's flavor. My husband said the crust was perfect and my son thought it was apples. I followed the advice of others and sliced the zucchini thin so it had the texture of sliced apples. The only things I did different was to process the flour sugar and butter mixture in my Cuisinart and added dollops of butter on top of the zucchini mixture before the topping was sprinkled on. I also patted the top down. My only complaint was that even thought the crust tasted great, there was too much of it in comparison to the zucchini. The next time I will double the zucchini mixture. Update: Increasing the zucchini filling by another half is the best combination.

Crispy Rosemary Chicken and Fries

My husband loved this. I used cubed chicken breast instead of chicken thighs, added fresh basil, and fresh garlic instead of powdered garlic, cubed the potatoes and put it in the George Foreman Grill for 10 minutes instead of baking it because I didn't want to heat up our house, and it turned out great.

Delicious Ham and Potato Soup

Bacon Wrapped Pesto Chicken

I made this exactly as the recipe called and it turned out great. My chicken breasts were quite large and it took 10 more minutes to finish cooking. The chicken came out moist and it was super delicious. The bacon added a wonderful flavor. My son is a picky eater and usually has to dip his chicken in a sauce ate the whole meal without needing any seasoned sauce. My husband kept raving about how good it was and wants me to make it again. This will make a great meal to prepare the chicken in advance and serve to company. Update: I sprinkled grated mozzarella to the chicken before rolling them up and it makes them taste even better.
