Carrot Cake III

Came out sweet and moist. I did make a couple alterations, though. (A) Substituted half the oil and half the sugar with about 1/2 to 3/4 cup of homemade applebutter. (B) Also, juiced carrots and used 3 cups of the "pulp" then added in enough juice to make a good cake batter consistency. RESULT: Every time I walk into the firehouse for a visit, I am asked to bring more carrot cake. One of the very few things to-date to be requested again and the only one to be requested emphatically.
