Mom's Best Macaroni Salad

This is the best macaroni salad I've ever had. I usually like macaroni salad, but always find I can't have too much of it because the mayo is so overpowering. Not in this! It is wonderfully dressed; sweet but still tangy. The only thing I omitted was the sugar and that was after I tasted it just before adding the pasta. Like many others I found it perfectly sweet with just the condensed milk. I used garden rotini for the color factor. I only needed 3 carrots, personally, but I didn't think they were overly large, I just think four would've been a lot after I shredded them. I only used half of a red onion, but I think I could've used the whole thing and been fine, but I did have some fresh sweet onions from the garden I needed to use up so I had about a 1/4 cup of that. I used red, green, AND orange peppers, again for color. The celery is the only thing I measured, but would probably add an extra half+ cup more of it next time. I might try olives next time, but I don't care too much for them. Other than that, I think you can use whatever veggies you would like and have no problems. The dressing would probably be good on a regular salad, too, or even a sandwich, it is THAT delicious!!

Quinoa Stuffing

Followed the recipe as stated and found it to be pretty bland, but I couldn't figure out what it was lacking. If I did it again, I probably would'be tried using the chicken broth I had on hand instead of going out of my way to get some vegetable. It would lose it's vegetarian charm, but might have a richer flavor. I was disappointed. First time using Quinoa, though, and am thankful for the experience. Would have to figure out how to make it more flavorful.

Slow Cooker Beef Stroganoff I

Pretty average, simple recipe. I add sour cream anyway, even though this is more of a stroganoff for people who don't like stroganoff.

Chef John's Ham and Potato Soup

The first few times I made this recipe, I did it by the book (minus the cayenne). With each time after I started just tossing in amounts that seemed right/better to my preference. The second to last time I made it I added red pepper flakes as a substitution to cayenne because then I didn't have to buy another spice. This last time though, I went all out. I added a lot of extra ham, steamed a head of cauliflower prior and used half of it - diced small - added half a bag of frozen corn and pease each. and technically added extra potato (russets) but less than I normally do to make up for the cauliflower addition. I didn't have any cream or half and half today, so just through in like a cup of milk... I don't know, I just poured it from the gallon. And of course pepper flakes/cayenne. This soup, no matter what I do to it, turns out amazingly, and never wrong, and I always have multiple bowls of it a day! This is a keeper!

Rich and Creamy Tomato Basil Soup

This was pretty good. I think I had some pretty large tomatoes, so it wasn't as rich as I expected, but I also didn't seed and peel based on others' reviews. Maybe next time I will actually do that, or add more cream/butter. It had a great basil flavor. Slight modifications: I had some sweet onion leftover with the greens on top still, about a 1/4 cup max, so I threw that in there. I also added 4 large cloves of garlic. Garnished with chives and some parmesan.
