Blueberry Muffins II

This is the best blueberry muffin recipe I have found. The only changes I made were using thawed frozen bluberries, not mashing any in (just folded bluberries in at the end), and reducing total sugar topping to about a tablespoon for the whole batch. Don't worry if the batter seems too thick. Use an ice cream scoop to divide the batter between the cups, and as others state, make sure to grease the tin well to prevent sticking. Cooking spray does the trick. These are delish!

Fluffy Pancakes

I used apple cider vinegar instead of white (didn't have any on hand) and followed the recipe as written. They were absolutely delicious. The only advice I would offer is regarding the cooking temperature--they don't quite cook like other pancakes I've made. For the first batch, I got the griddle nice and hot (like you would for pancakes), and when they looked done on the outside, they were still a little raw in the middle. The next batch, I used the high heat at first (to give them a nice brown color on the outside), then turned down the heat to medium-low so the insides would cook through and the outside would not burn. They came out perfectly. Thanks for this wonderful recipe!

Best Brownies

This is my new go-to brownie recipe! I've never made the fudge topping, but they are delicious without. (Try topping them with fresh strawberries and homemade whipped cream.) I never knew it was so easy to make brownies from scratch. I will never use a mix again. These are seriously just as easy as a mix, taste way better, and don't have the pesky trans fats that most mixes have. Thanks for this wonderful recipe!

Gnocchi I

I followed the recipe and ended-up with dense, hard dough balls. I could also taste the flour. I remember the gnocchi of my youth (made by my Italian mom) being light, pillowy, and only slightly chewy. It looks like others had great success with this recipe, though, so perhaps I did something wrong!
