To Die For Blueberry Muffins

Do not fill to the top! OK, I had to put that up front, as I think it is important; mine overflowed (as also noted by others) and went all over the bottom of the oven. This turns out to be a complete waste of deliciousness!! These are without doubt the most devine muffins I have made. I bought blueberries with the intention of making muffins just like you find at the gourmet shops...and guess what! This is it!! Perfect!!

Chewy Chocolate Cookies I

Yes, YES, YES!!!!!!!!!! These are THE best cookies I have EVER made. They are crisp on the outside, soft and chewy on the inside. Perfect!! Being a bit hopeless when it comes to cooking sweets, I did read previous reviews and only attempted half a batch. For this I increased the amount of flour used to 1 1/2 cups, the amount of baking powder to 1 tspn (my jar says to use 2 tspn per 4 cups of flour), and the cocoa by maybe an extra 2 tbpsn. I did everything else as per the recipe. I found 9 minutes not long enough, but I think given all ovens cook differently, this is just a typical fiddle until you find the right time/temp. And that was it!! "They aren’t half bad, are they!" is a rave review from my 5 year old who NEVER eats home made cookies! We gorged ourselves on these and will most definately make again!! UPDATE: I have just made these again, only two days later, and this time used wholemeal flour since that was all I had. These cookies are going to be so bad for my waist-line...I can't stop eating them! The kids love them...everyone loves them! Can I give another five stars....?!!

Chewy Brownie Cookies

Well, I should start by saying that I am a completely hopeless cook when it comes to sweets and cakes. However, I tackle them because my kids love to make them - but never like to eat them. So we cook for fun, rather than consumption ;-) Anyway, my 5 year old and I just made these. First! The batter is a hit straight off the spoon. But when I cooked them, I found that they went flat as a pancake REAL fast - but on review I realised, (reading other reviews) that you shouldn't add the water if you use butter. So, that accounted for that in my opinion: I added a little more flour and soda to sort out that problem and it seemed to improve the problem. However, they still look wrong - like little cake cookies, not crunchy on the outside cookies. However, they taste SUPERB!! 5 yr old has consumed 3 very quickly!! I am in the process of making coffee to have with mine. I will make them again, because I am sure the problem was something I did, and I am going to get these right, because when I do I know they will be the best cookies I have ever had!

Beef Florentine

We all loved it in our house, the bowls were all but licked clean, though am sure my 4yr old considered it. I did make some changes as I find that taste is very subjective and that where seasonings are concerned it is better to go with your own personal taste than a prescribed quantity...so I went nuts and added a bit more garlic, a good sprinkling of Italian seasoning, beef stock powder, a grated carrot (it is all about sneaking in the vegies where the kids are concerned) and a tin of tomatoes. Everything else was unchanged....and it was just fantastic. I just polished off the leftovers for my lunch and it was even better.

Chicken Enchiladas II

Delish!! Slight change was that I cooked the chicken slowly with cumin, stock, and a dash of red wine vinegar then shred it. I also used cream of chicken soup rather than the mushroom, and I added some salsa on the top with the cheese. Just beautiful!!!

Shredded Potato Salmon Cakes

Very yummy! I left the mushrooms out, feeling that might add more moisture to the mix. I think I might bake them next time too or do them in the omlette maker...I am not used to cooking in oil anymore and found that made it a little heavy. However, that said, the flavour was just delicious and I was ecstatic to find the recipe for us people who are too slack to boil the potatoes first!

Chili I

Holy cow this was supreme!!! I used only beef sirloin and did not include the cayenne pepper or fresh chili peppers as I was going to feed to my 2 and 4 year olds...I also topped it with a dollop of sour cream (for the kids benefit), shallots and cheese. I didn't cook it as long as I would have liked, to really get the meat tender - but the bowls were all but licked clean and my husband went looking for more. Even my 4 year old, who is VERY fussy asked if there was more! I actually came back here to copy the recipe for a friend...just fantastic!

Award Winning Soft Chocolate Chip Cookies

I have got to say I wasn't too sure about them myself as I tend to like my cookies a little more firm. But then everyone I served these too, young and old, loved them. Everyone wanted the recipe and my son (who doesn't eat cookies at all), come back for more. That is always worth 5 stars in my books.

Cream Puffs

I am really sorry these didn't turn out. I followed every instruction to the letter, but they did not rise. I had read other reviews that had said similar, so let the dough cool prior to adding the egg(one suggestion), I also noted someone elses looked fried - and that is what happened to mine. I would go so far as to think that maybe the temperature is too hot - mine looked fried within 15 minutes of the allocated time. I turned the oven down, but there was no salvaging them at that point. I didn't even bother to fill them as they were just hard and yuck looking.

Mexican Rice

This was nice. I didn't add the saffron as I didn't have it in my pantry and perhaps this might make this dish more of a stand out. I will have to make it again to see. I did serve this with a dollop of sour cream and chopped shallots on the side. This was made this rice better in my view.

Shredded Beef Enchiladas

Oh my stars!! This was just supreme. My husband had three helpings and made "mmmm" noises while eating, which is very rare indeed. I did reduce the amount of chilli in the meat by half. This was still quite firey for us, though not overly so. I really enjoyed cooking this also and the reaction to the meal was well worth it too.

Chinese Chicken Fried Rice II

Sweet and Sour Pork Patties

This was just lovely! Rave reviews in my family with my husband asking for it weekly. I also used the recommendation of another reviewer and used the Sweet & Sour Sauce II recipe. I have also made this with chicken and it is equally tasty. I do add ground pepper however, as I love my pepper, but all in all it a fantastic meal.
