Best Chocolate Chip Cookies

These are excellent! I didn't have enough butter, so I used half butter, half margarine. Still awesome. I'm not good at making cookies, but I can make these. When I used to make cookies before, they always turned out cake-like. I think the reason was because I used to beat the sugar and butter with a mixer until really creamy (like white color). And the same with the eggs. This time, I used a mixer, but not as long...just until I could mix it on my own and it was creamy. Also, I melted the butter and then waited for it to get hard again. I added a little more butter, since mine was melted when I measured it. (about 2 tbs more) So great, I finally found a recipe that makes crispy outside, and chewy inside cookies! yum! Note: I made these again, and this time I forgot to dissolve the soda in the hot water (I just added it into the dry ingredients). So, I ended up adding the hot water at the very end (before the chocolate chips)...and they still turned out great! I wonder why you have to dissolve the soda in the water. Oh well, I'm happy. :)

Chinese Steamed Buns

Very nice. I live in China, and gave my husband and a friend of ours a taste. They both really liked it. They said it's different from the ones they are used to, which are no sweet at all, but they liked it better. I also used milk. I made them twice actually. The first time I followed others' advice and added the baking soda, to counteract the sourness, which really wasn't necessary. I ended up adding it, and then had all these brown spots and strips in the buns. Word of advice, if you add b soda, make sure you knead it in really well...I think that's what I did wrong. The second time I didn't add the soda at all, and it was still great. However, I still kneaded in the baking powder really well. It turned out great. Thanks.

Restaurant Style Beef and Broccoli

Very good, and very easy. Didn't have oyster sauce or sherry or starch, but it still turned out great. I used Chinese soy sauce instead. We live in China, my husband is Chinese, but he's never had this dish before. He said they usually use Pork and broccoli. Anyway, he liked it a lot.

Burger or Hot Dog Buns

Yum! :) I made it together with my husband. We took out 1 cup of all-purpose flour and replaced it with one cup of whole wheat flour. At first, the dough was a little dense. But I followed what others said, like normal bread, let it rise for an hour, then I made the balls and let it rise for another 30 minutes. They turned out fantastic. Nice and soft, didn't crumble when cutting through the middle. Very yummy!

French Baguettes

Awesome and flexible. You don't really need to do the egg wash finish. You can, it makes a nice pretty finish, but if you don't it still tastes awesome. This is my husband's favorite. I try to make it often. I usually triple the recipe, make a big fat loaf, and bake it all together. It turns out really big, and really yummy. :) And I don't have a bread maker, so I just follow what one would normally do when making bread (yeast, water, and sugar first...), and follow the ingredients used here. I've made it for parties, friends, get togethers, and it's always a hit.

Delicious Ham and Potato Soup

This recipe is so easy, and loved by many. It's also very flexible. I usually use whatever I have. i.e. sometimes I don't have celery, but I have corn and peas (which also tastes very good). I don't put the chicken bouillon, mainly because the ones here are filled with MSG. I've even taught my husband how to make it. I made it once for a Christmas party, and it was a hit. A good partner is some french bread (or any homemade bread). Thanks for the recipe.

English Muffins

I loved them. I'm living overseas, making it hard to find certain foods. So, I gave it a try, and they are just like the ones I bought in the US. Someone commented that it's much easier to bake them...I totally agree. I baked half and fried half. The baked ones turned out nice and it was a big time saver. The fried ones were nice too, but didn't keep as well. Thanks for the great recipe :)
