Garlic Chicken

I was astonished at how tasty and juicy these chicken breasts turned out! This recipe is super easy and super tasty. I was concerned over some of the lower ratings on taste, but I followed the recipe as is for flavor and it really pulled through. I did reduce the oven temperature to 400 instead of 425 based on some reviews, so these were perfect. I served them to my husband who doesn't really care too much for chicken breasts (he prefers dark meat) and even he was amazed. I served this with mashed potatoes one time and the second time with rosemary & garlic roasted potatoes & broccolini, which went very well together.

Rempel Family Meatloaf

This recipe is incredible. It is incredibly flavorful and not goopy at all. I like meatloaf, but I *love* this meatloaf. I made this last week and my husband was almost in tears, he loved it so much. He's specifically requested it again next week. I didn't have any steak sauce on hand, so I just substituted Worcestershire sauce and some grill seasoning. Either way, it is a great addition to my repertoire.

Pumpkin Chocolate Chip Cookies I

I got rave reviews for these cookies - but took the previous reviwers' comments to heart by adding an extra 1/3 Cup of pumpkin and almost doubling the spices and chocolate chips. The cookies were like mini muffins, they were so soft!

Italian Sausage Soup

This recipe can be made in almost endless ways. I add potatoes, green beans, and use kale instead of spinach. It's my fiance's favorite dish I make. A surefire hit every time.

Potato Casserole

I brought this to my annual Christmas party and it was gone in a heartbeat. I did make a few changes 1) I used bagged hashbrowns (not frozen), 2) I added cooked chopped up bacon, 3) I used french fried onions on top instead of cornflakes, and 4) I cut back on the amount of butter. I'll be making this often.

World's Best Lasagna

This is my first try at homemade lasagna and it was wonderful. Alterations were to reduce the salt, added a tad more italian seasoning (I love spices) and to have 1 lb of mozzerella (instead of 3/4 lb), and doubled the water. I took a shortcut and used Barilla "no boil" noodles, which tasted fantastic! It sounds like I made a lot of alterations, but I will certainly continue to use this recipe!

Orange Drop Cookies II

The cookie alone without the icing is nothing spectacular - but the icing really does add an extra spark. I'd make these again, but add even more icing and up the quantity of orange peel, and maybe even add some orange essence to the cookies, too.

Chocolate Spice Cookies

Excellent as is - without the icing. These bake up with a soft inside. I included the chopped pecans, but sans the raisins. They were a big hit.
