Holiday Pumpkin Cake with Rum-Cream Cheese Glaze

This rating is ONLY for the frosting which I used on a banana cake. I thought the frosting was decent. It actually lost that cream cheese twang due to the sugar ratio, so I had to add bottled lemon juice a little at a time til it tasted right. This frosting did not come out white for me like in this picture because my rum extract is brown. I don't even know if they make that in clear, but I guess they must else this photo wouldn't show white glaze.

Bananas 'N' Cream Bundt Cake

The cake came out wonderfully. I love cakes made with sour cream. Butter would've tasted richer than shortening. I used 4 brown bananas. Thanks for sharing!

Meatballs and Sauce

We really liked it. I did wind up adding garlic powder and Worcestershire for my tastes. I was surprised that I liked this because I don't like cream of mushroom soup, and I *HATE* the brand of meatballs I bought (I bought 6 lbs of them at a BOGO sale and am trying to find ways to use them up). This sauce made them actually taste GOOD this way instead of just "barely tolerable" like they usually are. Even though I had to add a little bit to the recipe to make it to my taste, it still gets 5 stars for turning those nasty meatballs into a tasty dinner. Thanks!

Dulac Dirty Rice

We really loved this. I used one whole orange peppper, one whole onion, and a few shakes of Penzey's Cajun seasoning just to make sure this had some pep for us. I used all the optional things, pecans, raisins, scallions, etc. In the future I will add one browned andouille sausage as well. Thanks for the recipe!

Baked Ziti I

This is very good, but I prefer the versions with a homemade sauce & some cottage cheese. If you aren't accustomed to homemade sauce, use your favorite jarred and you'll love this. Don't use all ricotta, that just turns this into lasagna and you lose the lovely sour tang that is the hallmark of baked ziti.

Easy Sausage Strata

I would prefer this with less liquid, so I would reduce the milk a bit and I'd probably bake it immediately, like I would a dressing recipe. Thanks for sharing, it was well-received!

Cranberry Sauce Extraordinaire

I omitted the nuts and added some allspice because we like it in cranberry sauce. I always serve this warm over a brick of cold cream cheese, with crackers, and it's a huge hit. Thanks for sharing!

Cream Cheese and Chopped Dried Beef Ball

Not enough cream cheese, too much dried beef, too much other salt. Modify that at will and taste it before you mold it together and you'll have a winner. Some people like more salt, some people like less, but it definitely needs more cheese to bind it. Thanks for sharing!

Eileen's Spicy Gingerbread Men

Excellent flavor. I rolled it into a log and froze it, thawed it, rolled the log in powdered sugar, and used unflavored dental floss to slice it into rounds. Perfect, soft, and flavorful. In an ideal world I'd have cut them into gingerbread men but I haven't got time this year -- but these are delicious even for those of us who aren't keen on cookie cutters! Thanks for sharing! P.S. I used less cloves and more cinnamon due to taste preferences.

Chef John's Macaroni and Cheese

This has a lot going for it, so 5 stars. It was not my very favorite because I missed the flavor of garlic in this dish. I do think I prefer a teaspoon of dried ground mustard powder to a teaspoon of Dijon also. But this is definitely a top contender with just a few flavor tweaks based on personal preference :) Thanks for sharing!

Caramel Brownie Cake

Everyone but me really loved it. I thought it was too sweet and the brownie part baked up thinner and a bit chewier than I expected based on this photo. Because I like to make my life more difficult than it has to be, in the future I'd whip my own cream for this so it isn't too sweet. Thanks for sharing!

Oatmeal Raisin Cookies IV

This is my new favorite oatmeal cookie recipe. I doubled the cinnamon and added 1/2 tsp salt since I use unsalted butter. I used quick-cooking oats because I like my oatmeal cookies less poofy. I used a bigger cookie scoop -- it's actually the one I use for meatballs, I really don't know the size, but not that big -- and baked for 17 minutes. Thanks for sharing your recipe!

Sausage 'n Stout Cheese Soup

The taste is very nice, but it's too thin and the cheese does that funky thing that cheese does when added without a roux. This is a great idea, but it's worth the time to find a beer-cheese soup with a roux, at least for me, in the future. Thanks for sharing!

I had to add quite a large amount of spices to this to make it tasty. Perhaps I didn't add enough cheese though. There's definite potential to add spices to your personal tastes here for a 5 star recipe. Thanks for sharing!

Pecan Sour Cream Pound Cake

This turned out deliciously. I did have to bake it quite a bit longer than stated (in a tube pan) -- around 110 minutes, so 1 hour 50 minutes. The last 15 minutes I baked at 350 because I was just so tired of checking it in 15 minute intervals. I would bake this at 325 next time rather than 300. It turned out of the pan (using Baker's Joy spray) beautifully and tasted great. Thanks for sharing your recipe!
