Pecan Logs

Reviewed: Nov. 20, 2011
Wow!! These are exactly how I remember them growing up. The only think I changed was to add 2 tbs more of the confectioners sugar to the batter to sweeten it up a bit because when I tasted the dough it tasted not quite sweet enough. Excellent!

Milk Chocolate Florentine Cookies

Reviewed: Nov. 20, 2011
Although the taste was wonderful, I was disappointed in the consistency of these cookies. When I think of Florentine cookies, I think of thin, lacy cookies. These were definitely not them. Perhaps more liquid is needed to make them flatten/melt as you cook them? Per another review, I had to flatten them with a spatula. If not, they were the same size as when they went in. Way too thick for Florentine and way way too thick to sandwich together, so I just drizzled chocolate over the top of them.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Apr. 17, 2011
I absolutely love this. It's got quite a kick, so ease up on the cayenne if you don't like too much heat.

Clams Italiano

Reviewed: Apr. 2, 2011
This is phenomonal. Very simple recipe. We serve it over linguine tossed with canned white clam sauce. The only change we make is serve about a dozen clams per person.

Chipotle Sauce

Reviewed: Oct. 16, 2010
This is fantastic! Just like the restaurants. I didn't have plain yogurt, so I used sour cream instead. My picky 12 year old couldn't get enough of it. We used it on steak quesadillas.

BBQ Pork for Sandwiches

Reviewed: Jan. 18, 2009
This was wonderful! 5-stars for taste and 5-stars for simplicity. I used country ribs on the bone because that's all my store had. It wasn't a problem though b/c when I was ready to shred it, it fell right off the bone. Will be making this one regularly. Thanks!

Shrimp Scampi Bake

Reviewed: Jan. 11, 2009
Sorry, but my family and I did not like this one. The dijon taste was overpowering. My daughter asked if I put vinegar in the recipe (she didn't know about the mustard). Maybe start w/ 2 tsp. and taste before adding the third. I also cut the butter down to 3/4 of a cup per other reviewers. This was more than enough. I used cooked shrimp and put the mixture under the broiler until it was hot and bubbly. Would've given it three stars, but my family requested that I not make this again, so it only gets two.

Out of this world! My whole family loves this. I add 4 ounces of cream cheese to give it a more creamy texture.
